It’s a flavor profile that speaks of sun-drenched Mediterranean shores and fresh, wholesome ingredients. This classic Greek symphony of tastes is one I find utterly irresistible, reminiscent of my popular Greek chopped salad and delightful Greek pasta salad, both featuring protein-rich garbanzo beans and a zesty red wine vinegar dressing. These salads are frequent stars in my kitchen rotation, cherished for their fresh appeal and satisfying textures.

Today, we’re elevating this beloved combination with a few exciting additions. Our recipe introduces succulent sautéed shrimp, transforming the salad into a hearty main course. We’ll also craft a bright, lemony vinaigrette that infuses every bite with a refreshing tang. And for the pasta? My absolute favorite for salads: orzo! This tiny, rice-shaped pasta perfectly carries all the vibrant flavors without overwhelming the other ingredients. The resulting dish is a harmonious blend of crunchy, salty, fresh, and tangy notes, guaranteed to inspire a happy dance in your kitchen. Pair this exquisite salad with a chilled glass of prosecco or a refreshing Aperol spritz for an authentic Mediterranean experience. A small bowl of olive oil roasted almonds would be the perfect complement, rounding off a truly delightful meal. Prepare to savor every forkful of this exquisite Greek Orzo Salad with Shrimp!

Easy Greek Orzo Salad: A Refreshing and Satisfying Main Dish

This Greek Orzo Salad with Shrimp is more than just a side dish; it’s a complete, flavorful meal that consistently earns rave reviews. Each forkful is a vibrant explosion of taste, where tangy feta meets briny shrimp, juicy tomatoes mingle with crisp cucumbers, and fruity kalamata olives are balanced by the peppery freshness of parsley and the cooling aroma of mint. The entire medley is brought together by a simple yet exquisite vinaigrette, crafted from premium extra virgin olive oil and freshly squeezed lemon juice. It’s a testament to how fresh ingredients and thoughtful preparation can create something truly spectacular.

A Light and Wholesome Entrée. Perfectly suited for warm summer evenings or any day you crave a lighter yet satisfying meal, this salad is a fantastic choice. With a generous 21 grams of protein per serving, it offers a healthy and fulfilling dinner option that won’t leave you feeling weighed down. If you’re a fan of pasta salads as your main course, you might also enjoy exploring my crab pasta salad or comforting chicken macaroni salad for more dinner inspiration.

Orzo: The Ideal Pasta for Salads. Orzo, with its charming rice-like shape, is truly the unsung hero of many pasta salads, and this Greek version is no exception. Its small size and delicate texture make it the perfect vehicle for soaking up the rich flavors of the dressing and complementing the other ingredients, rather than overpowering them. Unlike larger pasta shapes, orzo offers a pleasant, lightly chewy bite without becoming sticky. Furthermore, its rapid cooking time is a definite advantage, allowing you to get this delicious salad on the table much faster than traditional pasta dishes. You’ll find a variety of popular orzo salad recipes on RachelCooks, a testament to its versatility and widespread appeal.

A Delightful Dual-Purpose Dressing. The bright, lemony oregano vinaigrette is a star in its own right, performing double duty in this recipe. Not only does it serve as the vibrant dressing that coats every component of the salad, but a portion of it also acts as a quick, flavorful marinade for the shrimp. This clever approach infuses the shrimp with Mediterranean zest before cooking, adding an extra layer of depth to the dish. For those who prefer alternatives to shrimp, this salad is incredibly adaptable. Cooked or grilled chicken makes an excellent substitute, bringing a different texture and flavor profile. For a completely vegetarian version, chickpeas (garbanzo beans) or cannellini beans work wonderfully, providing a protein-packed and satisfying option.

Ingredient Notes: Crafting the Perfect Greek Orzo Salad

While the list of ingredients may seem comprehensive, rest assured, this Greek Orzo Salad is surprisingly straightforward to assemble. Each component plays a vital role in creating its signature vibrant flavor profile. Here’s a closer look at what you’ll need and some helpful tips for each:

  • Orzo: A 16-ounce box of uncooked orzo pasta is the foundation of this salad. You’ll typically find it alongside other dry pasta varieties in your grocery store. For those with dietary considerations, whole wheat or gluten-free orzo can be excellent alternatives if available. If you’re looking for a low-carb option or simply wish to change things up, cauliflower rice or fluffy quinoa can be substituted for the orzo, offering a different texture and nutritional profile.
  • Shrimp: One pound of peeled, deveined shrimp with tails removed (size 31-40) is ideal. In many regions, frozen shrimp is often the freshest and most convenient choice. If using frozen, remember to thaw it thoroughly under cold running water for about 5 minutes before cooking to ensure even cooking.
  • Cucumber: Opt for a tender-skinned variety, such as English or Persian cucumbers. These varieties are a joy to work with as they typically don’t require peeling, saving you prep time. Plus, the skin adds valuable nutrients and a lovely vibrant color to the salad.
  • Red Onion: Half a medium red onion, thinly sliced, provides a beautiful color and a pungent, crisp bite. While red onions are traditional, green onions can also be used for a milder flavor. If you find raw onions too intense, a simple trick is to soak the sliced onion in a bowl of ice water for 10 to 15 minutes. This process significantly mellows their sharpness while maintaining their delightful crunch.
  • Cherry Tomatoes: The quality of your tomatoes truly shines through in fresh salads. Seek out the best-tasting cherry, grape, Campari, or heirloom tomatoes you can find. Tomatoes picked fresh from a garden or local farm market will offer unparalleled sweetness and juiciness, elevating the entire dish.
  • Kalamata Olives: These distinctive dark burgundy olives are a cornerstone of Greek cuisine. Their briny, fruity, and slightly tangy flavor adds a crucial layer of zest and complexity to the salad, complementing the other fresh ingredients beautifully.
  • Feta Cheese: For the most authentic and rich flavor, choose full-fat feta cheese. Ideally, purchase it in a block and crumble it yourself. Block feta often has a superior texture and richer taste compared to pre-crumbled varieties, which can sometimes be drier.
  • Fresh Parsley: Flat-leaf Italian parsley is preferred over curly parsley for its more robust and vibrant flavor. A generous ¼ cup, finely minced, adds a fresh, peppery counterpoint to the salad.
  • Fresh Mint Leaves: The addition of fresh mint is what truly distinguishes this Greek orzo salad, infusing it with an incredibly refreshing and aromatic quality. Do not substitute with dried mint; its flavor profile is entirely different. If fresh mint is unavailable, it’s better to omit it entirely than compromise the delicate balance of flavors.
  • Lemon Juice: You’ll need the freshly squeezed juice from two lemons, yielding approximately 6 tablespoons. This forms the bright, zesty base of our simple yet potent vinaigrette, providing the essential tang that defines Greek cuisine.
  • Olive Oil: Extra virgin olive oil is the other critical component of the vinaigrette. Choose a good quality oil for its heart-healthy properties and its distinctive peppery, green, and often slightly fruity flavor, which greatly enhances the overall taste of the salad.
  • Garlic: Two cloves of finely minced fresh garlic add a foundational aromatic depth to the dressing. Feel free to adjust the amount to your personal preference – use more for a bolder garlic punch, or less for a more subtle hint.
  • Dried Oregano: Oregano is quintessential in Greek cooking, bringing earthy and slightly peppery notes. While dried oregano works perfectly for the vinaigrette, if you have access to fresh oregano, you can certainly substitute it. Just remember to triple the amount of fresh herbs compared to dried to achieve a similar intensity of flavor.

Pro Cooking Tip: Taming the Red Onion

A smart trick to reduce the sharp, sometimes overpowering flavor of raw red onions is to soak the thinly sliced onion in ice water for 10 to 15 minutes. This simple step helps mellow its pungency while ensuring it remains wonderfully crisp, preventing it from dominating the delicate flavors of the salad. For best results, slice your onion first to allow ample soaking time while you prepare the other ingredients.

How To Make Greek Orzo Salad: Step-by-Step Instructions

Creating this delicious Greek Orzo Salad is a straightforward process, designed for efficiency and maximum flavor. Follow these simple steps for a perfect result:

Step 1: Initial Prep and Thawing. Begin by bringing a large pot of generously salted water to a rolling boil on your stovetop. While the water heats and the orzo cooks, you can efficiently prepare the vinaigrette, shrimp, and chop your fresh vegetables. If you are using frozen shrimp, place it in a colander in your sink and run cool water over it for about 5 minutes to ensure it thaws completely.

Step 2: Prepare the Zesty Vinaigrette. In a small bowl or a liquid measuring cup, combine all the dressing ingredients: freshly squeezed lemon juice, extra virgin olive oil, finely minced (or pressed) fresh garlic, dried oregano, kosher salt, and freshly ground black pepper. Whisk vigorously until all the ingredients are thoroughly combined and emulsified. This vibrant dressing will infuse your salad with incredible flavor.

Two images side by side. One shows vinaigrette ingredients before whisking, the other shows them perfectly combined after whisking.

Step 3: Perfectly Cook the Shrimp. Place your thawed and cleaned shrimp in a separate bowl. Add a couple of tablespoons of the freshly prepared vinaigrette, stirring gently to ensure each piece of shrimp is lightly coated. This acts as a quick, flavorful marinade. Heat a medium-sized skillet over medium-high heat. Once hot, add the marinated shrimp to the pan. Shrimp cooks very quickly, typically within 2-3 minutes. Sauté until the shrimp turns opaque and curls into a C-shape, flipping halfway through to ensure even cooking. Promptly remove the cooked shrimp from the pan and spread them out on a plate to cool slightly. Once cool enough to handle, you can roughly chop them or cut them in half if you prefer smaller pieces for the salad.

Step 4: Cook the Orzo and Prep Remaining Veggies. By now, your pot of water should be boiling. Add the orzo pasta and cook it according to the package directions, aiming for an al dente texture. While the orzo cooks, slice your cucumber and tomatoes, and finely chop your fresh herbs (parsley and mint). Once the orzo is cooked, drain it thoroughly in a colander in the sink. Immediately rinse it with cool water to stop the cooking process and prevent it from sticking, then drain it again completely, shaking out any excess water.

Step 5: Combine All Ingredients. Transfer the well-drained orzo to a very large mixing bowl. Pour in the remaining lemony vinaigrette and stir well to ensure the pasta is evenly coated. Now, add all the prepped fresh ingredients: the sliced cucumber, red onion, halved cherry tomatoes, pitted kalamata olives, crumbled feta cheese, minced fresh parsley, and fresh mint leaves. Gently toss everything together until all components are beautifully distributed and coated in the dressing. Finally, add the cooled, chopped shrimp and give the salad one last gentle mix.

Step 6: Serve and Garnish. Your vibrant Greek Orzo Salad with Shrimp is now ready to be enjoyed! It can be served immediately for a fresh, light meal, or if you prefer the flavors to meld further, refrigerate it for a couple of hours. Before serving, always taste and adjust the seasoning – you might want to add a little more salt, freshly ground black pepper, or another quick squeeze of fresh lemon juice to brighten the flavors. A final drizzle of good quality extra virgin olive oil can also perk up the taste and add a beautiful sheen. Enjoy this delightful and wholesome Mediterranean-inspired dish!

Recipe Variations: Customizing Your Greek Orzo Salad

This Greek Orzo Salad is wonderfully versatile, allowing for numerous modifications to suit different tastes and dietary needs. Don’t hesitate to experiment with these delicious variations:

  • Substitute Chicken for Shrimp: If shrimp isn’t your preference, cooked chicken makes an excellent alternative. Consider using poached chicken for a tender, moist addition, or flavorful oven-roasted chicken breasts. For an even more authentic Greek flavor, grilled chicken marinated with a Greek-style marinade would be a truly superb addition, infusing the salad with smoky, herb-infused notes.
  • Make it Vegetarian: Easily transform this recipe into a satisfying vegetarian meal by omitting the shrimp. Instead, incorporate protein-rich legumes such as chickpeas (garbanzo beans) or cannellini beans. These additions provide a delightful texture and make the salad substantial enough to be a main course. If you enjoy wholesome vegetarian salads, you might also like my refreshing barley salad with tomatoes, cucumber, and parsley.
  • Alternate Dressing Choices: While the homemade lemony oregano vinaigrette is highly recommended, you can certainly opt for convenience by using a high-quality store-bought Greek salad dressing. Make-Ahead Ideas: Preparing Your Salad in Advance

For those who appreciate the convenience of meal prepping, you’ll be delighted to know that this Greek Orzo Salad lends itself beautifully to advance preparation. Many of its components can be prepped up to a day ahead of time, ensuring a quick and easy assembly when you’re ready to serve. You can chop all your fresh vegetables, prepare the vibrant lemony vinaigrette, and even cook the shrimp and orzo. Store each component separately in airtight containers in the refrigerator. When it’s time to enjoy, simply combine everything, toss with the dressing, and your fresh, flavorful salad is ready in minutes. This strategy is perfect for busy weeknights or for entertaining, allowing you to minimize last-minute stress.

Storage Tips: Keeping Your Salad Fresh

Proper storage is key to enjoying your Greek Orzo Salad over several days. Here’s how to keep it fresh and delicious:

Refrigerate: Any leftover salad should be promptly transferred to an airtight container and refrigerated. It will remain fresh and flavorful for up to 3 days. The flavors tend to deepen and meld beautifully overnight, making it an excellent candidate for next-day lunches.

To Serve After Storage: As the orzo pasta sits in the refrigerator, it will naturally absorb much of the delicious vinaigrette, which can make the salad seem a bit drier. To refresh and revive your salad, simply add a fresh squeeze of lemon juice and a generous drizzle of extra virgin olive oil before serving. This quick revitalization will perk up the flavors and restore the salad’s vibrant moisture, making it taste as good as freshly made.

  • ½ cup pitted kalamata olives, halved

  • ½ cup crumbled feta cheese

  • 2 tablespoons minced fresh mint leaves

Instructions

  • Bring a large pot of salted water to a boil. Add the orzo and cook according to the package instructions until al dente.
1 box (16 oz.) orzo pasta, uncooked
  • Meanwhile, in a small bowl or measuring cup, combine all dressing ingredients: lemon juice, olive oil, minced garlic, dried oregano, kosher salt, and freshly ground black pepper. Whisk vigorously until well combined.

½ cup extra virgin olive oil,
    2 cloves garlic, finely minced,
    2 teaspoons dried oregano,

  • In a separate bowl, combine the shrimp with 2 tablespoons of the prepared dressing, tossing to coat. Heat a medium-sized skillet over medium-high heat. Remove from the pan and set aside on a plate to cool. Once cooled, roughly chop the shrimp (or cut in half) if desired.

  • Drain the cooked orzo, rinse thoroughly with cold water to prevent sticking, and drain again completely. Transfer the cooled orzo to a very large mixing bowl. Add the remaining vinaigrette and stir well to combine. Now, add the prepared cucumber, red onion, cherry tomatoes, kalamata olives, crumbled feta cheese, minced fresh parsley, and fresh mint leaves. Toss gently until all ingredients are evenly distributed. Finally, add the cooled, chopped shrimp and give the salad one last gentle toss.

2 tablespoons minced fresh mint leaves
  • Serve your Greek Orzo Salad immediately for the freshest taste, or refrigerate for a couple of hours to allow the flavors to further meld and deepen. Before serving, taste and adjust seasoning with additional salt, pepper, or a squeeze of lemon juice if desired. A final drizzle of olive oil can also enhance the flavor and appearance.

Notes

  • Pro Tip for Onions: To mellow the strong flavor of raw red onion, thinly slice it and soak in a bowl of ice water for 10 to 15 minutes before adding to the salad. Drain well prior to use.
  • Storage Guidelines: Leftover Greek Orzo Salad can be stored in an airtight container in the refrigerator for up to three days. For optimal freshness and flavor, ensure it is refrigerated promptly after preparation.
  • Reinvigorating Leftovers: As the salad sits, the orzo will absorb more of the dressing. To refresh and revive refrigerated leftovers, simply add a fresh squeeze of lemon juice and/or a drizzle of extra virgin olive oil, then toss gently.
  • Vegetarian Adaptation: For a delightful vegetarian version of this salad, simply omit the shrimp. You can enhance the protein and texture by adding chickpeas (garbanzo beans) or cannellini beans, and/or a bit more crumbled feta cheese, if desired.
  • Chicken Substitution: Cooked or grilled chicken makes an excellent alternative to shrimp. It pairs exceptionally well with chicken that has been marinated in a flavorful Greek-style marinade before cooking, adding an extra layer of Mediterranean taste.
