Built for meal prep, tastes like a restaurant

Lemon, fresh herbs, and feta brighten just about any dish. Those Mediterranean flavors lift the salmon and vegetables here, creating a bowl that feels fresh and indulgent at the same time.

This recipe delivers a complete meal: protein from salmon, complex carbohydrates from grains, crisp vegetables, and healthy fats. It’s ideal for prepping ahead—assemble individual bowls when you’re ready to eat for optimal texture.

What makes this version stand out:

  • Meal-prep friendly: Components store well separately, so lunches and dinners stay fresh throughout the week.
  • Bright Mediterranean flavors: Lemon, oregano, and fresh herbs pair naturally with salmon and vegetables for a lively, balanced dish.
  • Easy to customize: Swap grains, change vegetables, or add toppings to suit your tastes or pantry.

Ingredient Notes

Below is a summary of the main ingredients and how they affect the final bowl. The full ingredient list follows in the recipe card.

  • Salmon: Either skin-on or skinless fillets work. Wild-caught salmon is recommended for its flavor. The fillets are seasoned with lemon zest, dried oregano, smoked paprika, salt, and pepper, with a touch of olive oil to help the seasoning stick.
  • Lemon yogurt sauce: Use plain, regular yogurt for a creamy but not overly tangy sauce; Greek yogurt can be thicker and tangier. Combine yogurt with lemon juice and zest, olive oil, garlic, and chopped fresh dill or parsley for a bright finish.
  • Cooked grains: Quinoa, rice, or farro make a great base. Cook from scratch or use pre-cooked packets for convenience.
  • Vegetables: Crisp cucumber, juicy cherry tomatoes, and thinly sliced red onion provide contrast to the warm salmon and grains. Feel free to substitute or add vegetables you prefer.
  • Optional toppings: Kalamata olives, crumbled feta, sliced avocado, or extra fresh herbs all elevate the bowl.

How to Make Mediterranean Salmon Bowls

1. Cook the grains. Start the quinoa, rice, or farro so it’s ready when the salmon finishes.

2. Season the salmon. Preheat the oven to 400°F (200°C). Line a sheet pan with foil or parchment. Mix olive oil, lemon zest, dried oregano, smoked paprika, salt, and pepper. Pat the salmon dry, place it on the pan, and rub the seasoning over the top.

3. Roast the salmon. Bake until the fish flakes easily with a fork and reaches about 140°F (60°C) in the thickest part; resting will finish the cooking. Timing depends on fillet thickness—about 12–18 minutes for typical fillets. Let rest briefly, then break into large pieces.

4. Make the lemon-yogurt sauce. While the salmon bakes, whisk plain yogurt with lemon juice and zest, olive oil, minced garlic, chopped dill or parsley, and a pinch of salt until smooth. Zest the lemon before juicing for easier zesting.

5. Prep the vegetables. Dice cucumber, halve cherry tomatoes, and finely chop red onion.

6. Assemble the bowls. Divide cooked grains among four bowls. Top with flaked salmon, cucumber, tomatoes, and red onion. Add optional toppings and drizzle generously with the lemon-yogurt sauce. Serve immediately for the best texture.

Recipe Variations

  • Swap the sauce: Replace the lemon-yogurt sauce with tzatziki, hummus, tahini sauce, or a light vinaigrette for a different flavor profile.
  • Grain-free option: Use cauliflower rice or serve the ingredients over crisp romaine for a low-carb bowl.
  • Vegetable swaps: Add roasted peppers, cooked eggplant, or steamed greens in place of or alongside cucumber and tomatoes.

Serving suggestions

Warm bread: Pita, flatbread, or crusty bread make great vehicles for extra sauce and toppings.

Mediterranean sides: Serve with dips such as hummus or baba ghanoush and simple salads like tabbouleh or fattoush to round out the meal.

Storage & Reheating

Refrigerate: Store the salmon, grains, vegetables, and sauce separately in airtight containers for up to 3 days. Keep them separate to preserve texture; assemble bowls just before eating.

Reheat: Gently reheat salmon and grains in the microwave at reduced power or in a low oven until just warm. Avoid overheating the salmon to keep it tender.

Bowl with quinoa, grilled salmon, cherry tomatoes, cucumbers, diced red onion, feta cheese, and tzatziki sauce.
Roasted salmon, crisp vegetables, and hearty grains are finished with a creamy lemon-yogurt sauce for a healthy, flavorful Mediterranean bowl that’s easy to make and easy to customize.

Ingredients

For Salmon:

  • 1 ½ pounds salmon
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest (about ½ lemon)
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon coarse ground black pepper

For Lemon Yogurt Sauce:

  • ¾ cup plain yogurt (regular, not Greek)
  • 1 ½ tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill or parsley (or both)
  • 1 small garlic clove, minced
  • ½ teaspoon lemon zest
  • ¼ teaspoon kosher salt

For Bowl:

  • 2 cups cooked quinoa, rice, or farro
  • 1 cup diced or thinly sliced cucumber
  • 1 cup halved cherry tomatoes
  • ¼ cup finely diced red onion

Optional Toppings:

  • Kalamata olives, crumbled feta, sliced avocado, or extra fresh herbs

Instructions

  • If serving with quinoa, rice, or farro, begin cooking the grain so it finishes as the salmon rests.
  • Preheat the oven to 400°F. Line a sheet pan with foil or parchment for easy cleanup.
  • In a small bowl, combine olive oil, lemon zest, dried oregano, smoked paprika, salt, and pepper. Pat the salmon dry and place it on the sheet pan. Rub the seasoning mixture over the top of the fillets.
  • Roast the salmon about 15 minutes, or until it flakes easily with a fork and registers about 140°F in the thickest part. Allow the salmon to rest 5 minutes, then flake into large pieces.
  • While the salmon cooks, whisk together the yogurt, lemon juice, olive oil, chopped herbs, garlic, lemon zest, and salt until smooth.
  • Prep the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  • To assemble, divide cooked grains among four shallow bowls. Top with flaked salmon, tomatoes, cucumber, and red onion. Add optional toppings if desired, drizzle with the lemon-yogurt sauce, and season with freshly ground black pepper and additional salt to taste.
  • Serve immediately for the best texture and flavor.

Notes

  • Salmon: Buy one large fillet or smaller pieces that total about 1 ½ pounds. Skin-on or skinless both work; skin separates easily after roasting.
  • Sauce: Regular plain yogurt gives a creamier, milder sauce than Greek yogurt. The sauce can be prepared up to a day ahead and refrigerated; stir before using.
  • Variations: Swap the lemon-yogurt sauce for tzatziki, hummus, tahini, or a vinaigrette. Use different vegetables or omit garlic if preferred.
  • Storage: Store components separately for up to 3 days. Reheat salmon and grains gently at reduced microwave power or in a low oven; avoid overheating.
