This carrot pasta sauce is creamy, satisfying, and perfect as a side dish. It pairs wonderfully with dishes like baked salmon, classic meatloaf, air fryer chicken tenders, air fryer chicken breasts, or grilled chicken. Consider serving it with a side salad dressed with carrot vinaigrette to enhance the carrot theme.

Carrot sauce is a culinary adventure! This sauce offers a unique experience, unlike any pasta sauce you’ve likely tried before. It’s a fantastic way to surprise and delight guests with an innovative use of a common vegetable.

The flavor is exceptional. This carrot pasta is mild in flavor, exceptionally creamy, and subtly sweet. It’s a crowd-pleaser.

It’s easy to make. This recipe is straightforward, and it should take you no more than half an hour to prepare. The ingredients are simple, and you probably have most of them on hand already. I encourage you to try it soon.

Ingredients

  • Carrots: The star of the sauce! You’ll need about 4 cups of diced raw carrots (approximately one pound). Scrub or peel the carrots before chopping.
  • Shallots: Shallots, a cousin of onions, have a milder, sweeter flavor, making them the perfect ingredient. If you cannot find shallots, a small yellow onion will suffice.
  • Olive Oil: Just a splash of olive oil for sautéing the carrots and onions.
  • Salt & Pepper: Kosher salt and coarsely ground black pepper are recommended for the best flavor. These are the ingredients we use when we test our recipes, so for the most accurate taste, use this combination. Finer ground pepper will result in a spicier taste.
  • Garlic: The recipe calls for four fresh garlic cloves. Feel free to adjust the amount according to your preference.
  • Red Pepper Flakes: Dried pepper flakes add a subtle touch of spice to the sauce, enhancing the overall flavor.
  • Vegetable Broth: To keep the sauce vegetarian, use vegetable broth. Chicken broth works as well. Opt for low-sodium or unsalted broth.
  • White Wine Vinegar: Since this is a no-tomato sauce, it is low in acidity. The vinegar balances the flavors.
  • Heavy Cream: A quarter cup of cream creates a remarkably creamy sauce.
  • Parmesan Cheese: Use high-quality cheese to top the pasta. You can shred, grate, or shave it. Shaved Parmesan makes an attractive presentation.
  • Chopped Chives: This herb adds a subtle garlicky onion flavor. If chives aren’t available, substitute another fresh herb such as Italian (flat-leaf) parsley, oregano, or sage.
  • Pasta: Select your preferred pasta type. You’ll need 12 ounces of dry pasta.

How to Make Carrot Pasta Sauce

You’ll need approximately half an hour to prepare this dish. Start by prepping the carrots, shallots, and garlic. Also, put a pot of salted water on the stove for the pasta.

In a large skillet with a lid, heat a splash of olive oil over medium-high heat. Add the carrots and shallots, season with salt and a few grinds of black pepper, and cook for about five minutes, until they start to soften and brown slightly.

Add the garlic and red pepper flakes to the skillet and cook for another minute, stirring constantly. The garlic will release a fragrant aroma. Be careful not to burn it!

Add the broth and bring the pan to a boil. Cover, and reduce the heat to medium-low. Simmer the carrots until they are very tender, about 20 minutes. The cooking time depends on how finely the carrots are diced.

Carefully transfer the contents of the skillet to your blender or food processor.

Process until the sauce is smooth.

Add the cream and puree until very smooth. Taste the sauce, and season with salt if necessary.

When the pasta is cooked al dente, reserve half a cup of the pasta water. Drain the pasta and return it to the pot. Stir in the carrot sauce until the pasta is fully coated.

Thin the sauce with the reserved pasta water if needed.

Divide the orange pasta among serving plates. Garnish each serving with Parmesan cheese, chopped chives (including the flowers, if you like), and additional red pepper flakes.

Garnish Ideas

  • Pesto: Instead of Parmesan cheese and chives, garnish the pasta with a spoonful of basil pesto. It’s both flavorful and colorful!
  • Toasted bread crumbs: Did you know you can easily make your own bread crumbs? Toasted pine nuts are also an excellent topping.
  • Chopped fresh herbs: If you don’t have fresh chives, use another fresh herb, such as Italian (flat-leaf) parsley, oregano, or sage.




Storage & Reheating Tips

Refrigerate/Freeze: Leftover pasta with sauce can be refrigerated in a covered container for up to three days. Cream-based sauces can be frozen, though I haven’t tested this carrot pasta sauce yet. Thaw frozen sauce overnight in the refrigerator before reheating.

Reheat: You can reheat individual portions in the microwave until heated through. Do not overheat. To reheat sauce that has been frozen, the sauce might appear separated (watery). Stir it well as you gently reheat it in a saucepan or skillet. It should come back together. Add the cooked pasta to the pan and stir to coat.
