Jack Frost mimosa

So much more than a regular mimosa! This cocktail is based on the simple formula for a mimosa: orange juice and prosecco. However, the orange juice is replaced by pineapple juice, enhanced with cream of coconut and Blue Curaçao, and fortified with white rum. Bubbly prosecco is added to lighten everything up and give the cocktail a bit of fizz.

A gorgeous hue! The distinctive blue color comes from Blue Curaçao, (pronounced Cure’-a-sow) a citrus based liqueur, similar to Triple Sec. It’s an essential fun ingredient in many cocktails, including a Blue Hawaiian, Blue Lagoon, Bluebird, or a Blue Motorcycle. You’ll also find it in this Mermaid Lemonade (with a cotton candy twist!)

An icy treat. This drink is served ice cold, of course. What else would you expect from Jack Frost? Get out your cocktail shaker, add plenty of fresh ice, and shake up a chilly winter cocktail!

Important Ingredient Note

This cocktail uses a product called Coco Real Cream of Coconut drink mix. There’s no substitute for it. Cream of coconut, coconut milk, or other products simply won’t work. It’s available at most grocery stores in the liquor section, and on Amazon.

Cheers! Cin Cin! Salut! Sláinte to your good health this season in whatever language you prefer!

If you want to build on the “chilly” theme, serve these darling snowman Oreo pops with your Jack Frost mimosas. Lofthouse cookies decorated with blue and white sprinkles are a fun go-along, too.

What’s in a Jack Frost cocktail?

  • Pineapple juice: Fresh or frozen pineapple juice is best; canned pineapple juice can be used but it often has an off flavor.
  • White rum
  • Blue Curaçao
  • Coco Real Cream of Coconut drink mix (no substitutions)
  • Prosecco: If you don’t care for prosecco, substitute champagne, or omit the bubbly altogether
  • Simple syrup and coconut flakes, for rim garnish (optional, but so fun!)

Ways to change it

  • Make a pitcher: Add the rum, pineapple juice, Blue Curaçao, and coconut cream to a large pitcher and chill for 1 to 2 hours. To serve, pour into glasses and top with prosecco just before enjoying. You can make 12 to 13 servings with one 750ml bottle of prosecco.
  • No alcohol or lower alcohol: This recipe is a bit tricky to make NA but you could try using cream of coconut, pineapple juice, and soda water or non-alcoholic sparkling wine. Add blue food coloring to mimic the color of the blue Curaçao. To make the cocktail lower in alcohol, omit the white rum.
  • Garnish options: The garnish on the rim of consists of simple syrup and flaked coconut. If you don’t have simple syrup but still like the garnish, dip the rim into plain water or pineapple juice, and then the coconut.
  • Don’t have a cocktail shaker? Make sure all your ingredients are ice cold and your drink will turn out fine.
