Why This One-Pan Chicken Stew Will Become Your New Favorite

This recipe isn’t just easy; it’s incredibly satisfying and versatile. It blends the best elements of beloved comfort foods like creamy chicken pot pie and rustic chicken and dumplings, offering a unique twist that’s sure to delight. The robust stew base is simmered to perfection, creating a thick, flavorful sauce that clings to every piece of chicken and vegetable. But what truly sets this dish apart is its golden, cheesy cornmeal biscuit topping. Instead of traditional rolled and cut biscuits, we opt for simple drop biscuits, lending a charming, rustic appeal and making the preparation even quicker. This combination creates a perfect balance of textures and tastes, making every spoonful a pure joy.

The Hearty, Flavorful Stew Base

At the core of this comforting meal is a deeply satisfying chicken stew. We begin by browning tender chicken pieces, locking in their juices and adding a layer of rich flavor to the pan. This step is crucial for developing the foundational taste of your stew, as the caramelized bits left in the pan, known as fond, will contribute immense flavor to the sauce. Next, aromatic vegetables like sweet onions and crisp celery are sautéed until tender, creating a fragrant base that fills your kitchen with inviting aromas. These simple ingredients are then transformed into a velvety, luscious sauce with a perfect blend of butter, flour, chicken broth, and milk. Seasoned generously with dried parsley, savory thyme, a hint of celery seed, and a balanced touch of salt and pepper, the stew develops a complex, homey flavor profile reminiscent of your favorite Sunday dinner.

To ensure a well-rounded meal, a bag of frozen mixed vegetables – typically containing carrots, peas, corn, and green beans – is stirred into the stew. This not only adds vibrant color and essential nutrients but also contributes to the stew’s comforting texture. The frozen vegetables cook directly in the simmering sauce, absorbing all the wonderful flavors and becoming tender without losing their integrity. This medley of ingredients comes together to create a robust, nourishing stew that serves as the perfect foundation for our unique biscuit topping, providing a wholesome and complete meal in every bite.

Elevating the Topping: Rustic Cornmeal Drop Biscuits

Forget the fuss of rolling and cutting. Our cornmeal drop biscuits are designed for maximum flavor with minimal effort. The combination of all-purpose flour and cornmeal creates a biscuit that is wonderfully tender on the inside with a slight delightful crispness on the outside. This addition of cornmeal adds a distinctive texture and a subtle, earthy sweetness that sets these biscuits apart. A touch of sugar enhances the cornmeal’s natural sweetness, while baking powder ensures a light and airy texture. Cold unsalted butter is cut into the dry ingredients, a key step for achieving flaky biscuits, and then sharp cheddar cheese is folded in, adding a savory, tangy burst that beautifully complements the rich chicken stew below.

The final touch is buttermilk, which reacts with the baking powder to create incredibly tender and flavorful biscuits. If you don’t have buttermilk on hand, don’t worry! A simple homemade substitute can be made by mixing milk with a tablespoon of vinegar or lemon juice and letting it sit for a few minutes until it slightly curdles. Dropping the biscuit dough directly onto the simmering stew creates charming, rustic mounds that bake to a golden perfection, soaking up some of the stew’s savory goodness while maintaining their fluffy texture. This topping is truly the crown jewel of this one-pan masterpiece, turning a simple stew into a complete, show-stopping meal that looks as good as it tastes.

Expert Tips for a Perfect One-Pan Stew Every Time

Achieving a restaurant-quality meal at home doesn’t have to be complicated. With a few expert tips, you can ensure your One-Pan Chicken Stew with Cornmeal Biscuits turns out perfectly every time, maximizing flavor and minimizing stress.

  • Browning the Chicken: Don’t skip this step! Searing the chicken until golden brown creates fond (the delicious browned bits at the bottom of the pan), which adds incredible depth of flavor to your stew. This caramelization is essential for a rich, complex taste.
  • Perfecting the Roux: When adding butter and flour for the stew base, cook them together for a minute or two until lightly golden and fragrant. This helps cook out the raw flour taste and creates a smooth, lump-free sauce when you slowly whisk in the liquids. Patience here ensures a velvety texture.
  • Temperature Control: Ensure your stew is simmering gently before adding the biscuit topping. This ensures even cooking and helps the biscuits rise properly, creating those desirable fluffy pockets.
  • Cold Butter for Biscuits: Always use very cold butter, cut into small cubes, for your biscuits. The cold butter melts slowly, creating pockets of steam as the biscuits bake, resulting in a wonderfully flaky, tender texture.
  • Don’t Overmix: When preparing the biscuit dough, mix only until the ingredients are just combined and no dry streaks of flour remain. Overmixing can develop the gluten in the flour, leading to tough, dense biscuits instead of light, airy ones.
  • Pan Size Matters: Use a large oven-safe Dutch oven or a deep skillet (at least 10-12 inches in diameter and with high sides) to prevent overflow in the oven as the stew bubbles and biscuits rise. If your pan isn’t large enough, simply transfer the stew to a 9×13 inch baking dish before adding the biscuits and baking.
  • Homemade Buttermilk: If you don’t have buttermilk on hand, easily make your own by adding 1 tablespoon of white vinegar or lemon juice to a liquid measuring cup, then filling the rest of the way to 1 cup with regular milk. Let it sit for 5 minutes until it slightly curdles; it will work just as well as store-bought buttermilk.
  • Sodium Control: For those monitoring sodium intake, opt for no-salt-added chicken broth or stock. You can always adjust the salt to taste at the end of the cooking process, adding small amounts until it suits your preference.

By following these simple guidelines, you’ll be well on your way to creating a memorable and effortlessly delicious meal that will gather compliments from everyone at the table.

Customize Your Chicken Stew with Cornmeal Biscuits

One of the joys of cooking is the ability to adapt recipes to your personal taste and what you have on hand. This One-Pan Chicken Stew with Cornmeal Biscuits is wonderfully flexible, allowing for various customizations to make it uniquely yours, catering to different preferences and dietary needs.

Ingredient Swaps and Additions:

  • Chicken: While boneless, skinless chicken breasts are convenient, feel free to use boneless, skinless chicken thighs for an even richer flavor and more tender texture. You might need to adjust cooking time slightly, as thighs often cook a bit quicker. You can also easily accommodate an extra half-pound of chicken if you have a larger pan and want to increase the protein content of your meal.
  • Vegetables: Beyond the mixed frozen vegetables, consider adding fresh diced potatoes (add them with the onions and celery to ensure they cook through and soften), sliced mushrooms for an earthy depth, or a handful of fresh spinach at the very end of cooking the stew for extra greens and a touch of freshness.
  • Herbs: Fresh herbs always elevate a dish. If you have fresh parsley or thyme available, double the amount called for in the recipe for a brighter, more vibrant flavor that really pops.
  • Cheese: Experiment with different cheeses in the biscuits! A sharp white cheddar, savory Gruyere, or even a spicy Monterey Jack could add an interesting dimension and a unique twist to the topping.
  • Spice Level: For a little kick, add a pinch of red pepper flakes to the stew along with the other seasonings. Adjust the amount to your preferred level of heat.

Dietary Considerations:

  • Whole Wheat Biscuits: If you prefer, substitute half or all of the all-purpose flour in the biscuits with whole wheat flour for added fiber and a nuttier flavor. You might need a tiny bit more buttermilk as whole wheat flour absorbs more liquid, so add it gradually until the dough comes together.
  • Dairy-Free Stew: For a dairy-free stew base, use unsweetened, plain dairy-free milk (like almond or oat milk) and a dairy-free butter alternative. Note that the biscuits contain dairy cheese and buttermilk, so a full dairy-free meal would require adjustments to the biscuit recipe as well.

Whether you’re sticking to the classic recipe or putting your own spin on it, this chicken stew with cornmeal biscuits is designed to be a comforting and adaptable meal that fits your family’s preferences and makes every dinner special.

Ingredients

For Biscuit Topping:

  • 1 3/4 cups all-purpose flour
  • 2/3 cup cornmeal
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/2 cup grated sharp cheddar cheese
  • 1 cup buttermilk (see note)

For Chicken Stew:

  • 1 tablespoon olive oil
  • 1 pound skinless, boneless chicken breast halves – cubed (see note)
  • 1/2 cup diced celery (about 1 large stalk)
  • 1/2 cup chopped yellow onion (about 1 small onion)
  • 3 tablespoons unsalted butter
  • 1/3 cup plus 1 tablespoon all-purpose flour
  • 1 tablespoon dried parsley (or 2 tablespoons fresh)
  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 2 cups chicken broth
  • 1 cup milk (2% or whole, skim doesn’t work well in this recipe)
  • 1 (16 ounce) bag frozen mixed vegetables (carrots, peas, corn, green beans)

Instructions

For the biscuits:

  1. Stir together flour, cornmeal, sugar, baking powder, and salt until combined.
  2. Cut in butter using a fork, pastry cutter, or your fingers, until it resembles coarse crumbs.
  3. Stir in cheese and buttermilk until just combined. Place bowl of biscuit dough in fridge while you make the rest of the stew.

For the stew:

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe Dutch oven or deep skillet, heat 1 tablespoon olive oil over medium heat. Add chicken and cook until golden brown and cooked through. Remove to a plate.
  3. Add onions and celery to hot pan (add a small amount of olive oil if needed) and cook, stirring, until translucent and softened.
  4. Add butter and flour and cook until butter is melted and lightly golden. Stir in milk and broth slowly while whisking, and continue to cook until simmering and thickened, about 8 minutes.
  5. Add in parsley, thyme, salt, pepper, celery seed, frozen vegetables, and the cooked chicken, and cook until mixture begins to simmer again.
  6. Drop biscuit dough onto stew using a spoon or your hands in about 1/3 cup portions, spacing them evenly over the stew.
  7. Transfer to oven and bake for 20-22 minutes or until bubbling around the edges and biscuits are golden brown and cooked through.

Notes

  • If you don’t have buttermilk, you can mix 1 tablespoon vinegar or lemon juice + enough milk to make 1 cup – let sit for 5 minutes, and you’re ready to go!
  • If your pan is big enough, this recipe will accommodate another 1/2 pound of chicken for a more protein-rich meal.
  • If you don’t have a large enough oven-safe pan, you can prep the chicken stew and then pour it into a 9×13 inch baking dish before topping with biscuit dough and baking.
  • For less sodium, use no-salt-added chicken broth or stock and adjust seasoning to taste at the end.
