Recipe Overview
Why you’ll love it: Inspired by Mexican street corn, this elote flatbread combines sweet corn, a creamy chili‑lime sauce, and salty cotija cheese on a crisp flatbread base. It’s an easy weeknight dinner, a quick snack, or a crowd-pleasing appetizer.
Time: About 30 minutes total (including a short cooling time).
Equipment: baking sheet, skillet, small bowl.
Yield: 2 flatbreads (about 4 servings).

This Is My Kind of Meal
This is a go-to when I don’t want to fuss with a full dinner but still want something satisfying and delicious. It sits between a snack and a meal: slice it, grab a piece, and it quickly feels like dinner.
With just about 10 minutes of prep and around 15 minutes in the oven, you can have it on the table even on busy weeknights.
What makes it special:
- All the elote flavor without the grill: I char the corn in a hot skillet to get those toasty bits, which works well with fresh, canned, or frozen corn. Toss with a limey, creamy sauce, sprinkle cotija, and finish with cilantro for that classic street-corn profile.
- Flexible base: Use flatbread, naan, pita, focaccia, thick tortillas, or pizza crust — whatever you have on hand.
- Great for entertaining: The corn topping and sauce can be prepared ahead, so it’s easy to scale up for a party or serve as an appetizer tray.
Ingredient Notes
Below are a few notes to help you choose ingredients and adapt the recipe.
- Flatbread: Any sturdy flatbread or similar base works. Choose a size and thickness that will crisp up in the oven.
- Corn: Fresh, canned, or frozen kernels are all suitable. Canned tends to be a touch more tender than frozen, but fresh in season is wonderful. You only need a cup of kernels.
- Sour cream and mayonnaise: These form the creamy sauce. You can swap Greek yogurt for sour cream if you prefer a lighter option.
- Lime and chili: Lime juice brightens the sauce and chili powder adds mild heat and depth. Adjust the chili to taste.
- Cotija cheese: Cotija is salty and crumbly and gives the flatbread its signature finish. Feta can be used in a pinch, but cotija is ideal.
- Cilantro: If you don’t like cilantro, parsley makes a fine substitute.
How to Make Elote Flatbread
Prebake the flatbread. Preheat the oven to 425°F (220°C). Place flatbreads on a baking sheet and bake for 5 minutes without toppings. This step helps prevent sogginess and gives crisper edges.

Cook the corn. While the flatbreads pre-bake, heat 1 tablespoon olive oil in a skillet over medium-high heat. Add 1 cup corn kernels, a pinch of salt and pepper, and cook 4–5 minutes, stirring occasionally, until some kernels develop a golden, slightly charred color. If using frozen corn, allow a few extra minutes.
Pro Tip
What charred corn looks like: The kernels should show golden brown spots and occasional darker flecks but remain plump and juicy rather than dried out.
Make the sauce. In a small bowl, whisk together 1/4 cup sour cream (or Greek yogurt), 2 tablespoons mayonnaise, 1 tablespoon lime juice, and 1/2 teaspoon chili powder until smooth.
Assemble. Spread a thin layer of the sauce over each prebaked flatbread. Top evenly with the charred corn and about 1/2 cup crumbled cotija cheese. Keep the corn layer reasonably thin so it holds together when you pick up a slice.

Bake. Return the topped flatbreads to the oven and bake 8–10 minutes, until warmed through and edges are crisp. Avoid overbrowning.
Finish and serve. Let the flatbreads rest for about 5 minutes, then sprinkle with 2 tablespoons chopped fresh cilantro and cut into wedges. Use pizza scissors, a large sharp knife, or a pizza cutter for clean slices.

Recipe Variations
- Add protein: Top with shredded chicken or crumbled chorizo for a heartier meal.
- Increase heat: Drizzle hot sauce over the finished flatbread, add cayenne to the sauce, or top with pickled jalapeños after baking.
- Make it melty: For a gooier texture, sprinkle grated Monterey Jack or a similar melting cheese over the sauce before adding the corn.
What to Serve With Elote Flatbread
- As an appetizer: Cut into small wedges and arrange on a platter with other dips or chips for a party spread.
- For a simple dinner: Serve alongside a fresh salad, black bean and avocado salad, or a light soup for a satisfying meal.
Pizza Scissors
A sturdy pair of pizza scissors or a large sharp knife makes slicing flatbread quick and neat. The flat bottom of scissors can double as a spatula for serving.
Storage & Reheating
Refrigerator: Store leftovers in an airtight container for up to 3 days.
Reheating: Reheat in a 425°F oven or a toaster oven to crisp the crust again. An air fryer also works well. The microwave is acceptable for convenience but will soften the crust.

Ingredients
- 2 flatbreads (see notes)
- 1 tablespoon olive oil
- 1 cup corn kernels (fresh, canned, or frozen)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1/4 cup sour cream (or Greek yogurt)
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/2 cup crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat oven to 425°F (220°C). Place the 2 flatbreads on a baking sheet and prebake for 5 minutes with no toppings to prevent a soggy center and to crisp the edges.
- While the flatbreads prebake, heat olive oil in a skillet over medium-high heat. Add corn, salt, and pepper, and cook 4–5 minutes, stirring occasionally, until some kernels are golden brown and slightly charred. If using frozen corn, cook 7–8 minutes.
- In a small bowl, mix sour cream, mayonnaise, lime juice, and chili powder until smooth.
- Spread a thin layer of the sauce over each prebaked flatbread. Top evenly with the charred corn and sprinkle with crumbled cotija cheese. Avoid overloading with corn so slices hold together.
- Bake 8–10 minutes more, until the flatbreads are warmed through and the edges are crisp. Watch carefully to prevent overbrowning.
- Let cool 5 minutes, sprinkle with chopped cilantro, then cut into wedges for serving.
Notes
- Flatbread: Use any sturdy flatbread, naan (about 9 x 7 inches), pita, focaccia, thick tortillas, or a thin pizza crust.
- Corn options: Canned corn is a bit more tender than frozen, but both work. Fresh cut corn is ideal when in season.
- To slice: Pizza scissors, a large sharp knife, or a rotary cutter all work well. Place the flatbread on a cutting board before slicing.
- Make ahead: The corn can be cooked ahead and the sauce mixed up to a day in advance. Store separately until assembling and baking.
- Storage: Best eaten right away, but leftovers keep in the refrigerator up to 3 days. Reheat in a 425°F oven, toaster oven, or air fryer to restore crispness.
