A Unique Way to Enjoy Polenta: These fries are created by slicing and baking polenta. Unlike the creamy texture of traditional Instant Pot polenta, these fries become delightfully crispy on the outside while maintaining that soft, creamy, and fluffy interior we all love.
Perfected Recipe: After numerous tests with both homemade and store-bought polenta, this recipe has been perfected to ensure the best results. While store-bought tubes can streamline the process, the texture and flavor of homemade polenta yield the superior result. However, a pre-made polenta option is included in the recipe card if you prefer a simpler approach. These are, without a doubt, the PERFECT polenta fries!
Double Duty Delight: This recipe is incredibly versatile! You can easily double the polenta and use half for these crispy fries. The other half can be served as creamy polenta alongside dishes like chicken cacciatore or slow cooker Italian pot roast. Refrigerate the remaining polenta to firm up and make more fries the next day.

- Polenta: Quick-cooking or instant polenta is ideal due to its fine grind, allowing it to cook in about 5 minutes. Traditional polenta takes longer to cook.
- Parmesan Cheese: Adds a rich, nutty flavor that complements the corn flavor of the polenta. I usually use grated Parmesan.
- Butter: Adds richness and flavor.
- Garlic Powder & Black Pepper: Along with salt, these seasonings enhance the flavor of the polenta.
- Olive Oil: Essential for achieving a crispy exterior. I prefer olive oil for the flavor it brings.
- Seasonings: The fries don’t need many seasonings as the polenta is already flavored. Garlic powder, dried oregano, and black pepper add to the flavor.
- Dipping Sauces: While great on their own, polenta fries pair perfectly with marinara, pizza sauce, garlic aioli, or healthy ranch dressing.

How to Make Perfect Polenta Fries
Prepare: Line an 8×8 inch square baking pan or dish with parchment paper. Lightly spray the pan and parchment with olive oil to keep the paper in place.
Make the Polenta: Bring water to a boil in a saucepan. Add salt, then slowly whisk in the polenta. Cook for a few minutes, stirring constantly until the polenta thickens. Stir in cheese, butter, garlic powder, and black pepper.



Chill: Immediately spread the hot polenta into the prepared pan and refrigerate for a minimum of 2 hours, or even overnight. The polenta needs to be firm enough to slice.
Cut the Fries: Use the parchment paper to lift the chilled polenta out of the pan. Place it on a cutting board. Cut it into half-inch thick fries, and place them on a parchment-lined baking sheet.
Recipe Tip: Achieve the Perfect Fry
Cut the polenta into evenly-sized pieces to ensure uniform cooking and texture. We tested thinner fries, about ¼-inch, but they turned out more chewy. Thicker fries tasted better!
Using a pan of homemade polenta is easier to cut into fry-shaped strips than using a tube of pre-made polenta!


Season: Whisk the oil and seasonings in a small bowl. Drizzle over the fries on the baking sheet and gently toss to coat.



Bake: Bake the fries at 425°F for 20 minutes. Flip and cook for another 15-20 minutes, or until the outsides are crisp and golden brown. Avoid overcooking, as they can become too hard.
Serve: Transfer the crispy polenta fries to plates or a platter and serve with your favorite dipping sauce.

Reheating: Reheat the fries in a 375ºF oven or air fryer until heated and crisp. The microwave can be used, but it’s not ideal for recrisping.
