- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 2 large shallots, thinly sliced (about 1/2 cup)
- 1 1/2 to 2 pounds chicken breasts or tenderloins, cut into bite-sized pieces
- 2 cups whole red grapes from California, washed and stems removed
- 1 tablespoon fresh thyme leaves
- 1/2 cup dry white wine
- 1 cup chicken broth
- 2 tablespoons Dijon mustard
- 3/4 cup heavy cream
- 1 1/2 teaspoons cornstarch
- 2 tablespoons water
- 1 1/2 cups lightly packed fresh baby arugula
