Key Ingredients for Your Marry Me Chicken Pasta

Crafting the perfect Marry Me Chicken Pasta begins with understanding the role each ingredient plays. Here’s a detailed look at what you’ll need and why:

  • Boneless Skinless Chicken Breasts: Opting for boneless, skinless chicken breasts ensures a lean protein that cooks quickly and absorbs flavors beautifully. Cutting the chicken into uniform bite-sized pieces is crucial for even cooking, ensuring every piece is tender and juicy. While breasts are ideal for their ease of preparation, boneless and skinless chicken thighs can also be used if you prefer a slightly richer, darker meat, just ensure they are cut consistently.
  • Simple Yet Powerful Seasonings: We keep the seasoning straightforward yet impactful. A base of classic salt and freshly ground black pepper enhances the natural flavors of the chicken. Dried oregano is a non-negotiable addition, lending an authentic Italian herbaceous note that truly elevates the dish. For those who appreciate a subtle warmth and gentle kick, a pinch of red pepper flakes is an optional but highly recommended inclusion. These seasonings are applied directly to the chicken before browning in olive oil, building the first layer of flavor.
  • Onion and Garlic: The Aromatic Foundation: These two humble ingredients are the backbone of flavor for our creamy sauce. A yellow onion, finely diced, will soften and almost melt into the sauce, releasing its sweet, savory essence without creating large, noticeable chunks. This fine dice ensures the onion’s flavor infuses the entire dish. Freshly minced garlic, added after the onion, provides that unmistakable pungent and fragrant aroma that defines so many beloved Italian-inspired dishes.
  • Sun-Dried Tomatoes: Burst of Concentrated Flavor: Sun-dried tomatoes are a star in this recipe, offering a concentrated burst of sweet and tangy flavor. For the best texture and sauce consistency, I highly recommend using dry-packed sun-dried tomatoes. However, if you only have the oil-packed variety on hand, they work perfectly well; just be sure to pat off any excess oil thoroughly with paper towels before chopping to prevent the sauce from becoming overly greasy.
  • Chicken Broth: The Flavorful Liquid Base: Instead of plain water, using high-quality chicken broth provides a much richer and more complex liquid base for cooking the pasta and developing the sauce. It infuses every component of the dish with savory chicken flavor, ensuring a deeper, more satisfying overall taste.
  • Heavy Cream: For Unrivaled Richness: Also often labeled as heavy whipping cream, this ingredient is essential for achieving the luxurious, velvety texture of our sauce. For optimal incorporation and to prevent any risk of curdling, it’s beneficial to let the heavy cream come to room temperature before adding it to the hot skillet.
  • Pasta: The Perfect Canvas: The choice of pasta shape is important for a creamy sauce. Penne or rotini are excellent selections, as their tubular or spiral shapes are perfect for “catching” and holding onto every last drop of the rich, thick sauce, ensuring a delightful texture in every bite.
  • Parmesan Cheese: Salty, Umami Finish: Freshly grated Parmesan cheese melts seamlessly into the sauce, contributing a salty, umami depth that is simply irresistible. While pre-grated, shelf-stable Parmesan can be used in a pinch, grating your own from a block will always yield a superior melt and a more pronounced, authentic flavor.
  • Fresh Basil: The Essential Herbaceous Garnish: This is one ingredient where fresh truly makes all the difference. The vibrant, herbaceous aroma and flavor of fresh basil are incomparable to its dried counterpart. It brightens the rich sauce, adding a burst of fresh Italian garden essence. I incorporate chopped basil directly into the sauce just before serving and then add a generous sprinkle as a garnish for an aromatic and visually appealing finish.

Crafting Your Dream: How to Make Marry Me Chicken Pasta

Follow these simple steps to bring this irresistible one-pan Marry Me Chicken Pasta to life in your kitchen. Remember, having your ingredients prepped and ready (mise en place) will make the cooking process even smoother!

Ingredients arranged neatly on a white surface, including raw chicken pieces, penne pasta, finely chopped onions, minced garlic, olive oil, sun-dried tomatoes, grated Parmesan, heavy cream, various spices, and fresh herbs in individual bowls.

Step 1: Perfectly Brown the Chicken. Begin by heating two tablespoons of olive oil in a large skillet (one with a lid is ideal) over medium-high heat. Once the oil shimmers, add your bite-sized chicken breast cubes to the pan in a single layer. Season them generously with salt and pepper. Cook for about 6 to 7 minutes, stirring occasionally, until the chicken is beautifully browned on all sides and fully cooked through. This browning step is crucial for developing deep flavor. Once cooked, transfer the chicken to a clean plate and set it aside, discarding any accumulated juices in the pan.

Step 2: Build the Aromatic Base. Reduce the heat to medium. Add the remaining tablespoon of olive oil to the same pan. Stir in the finely diced onions and sauté them gently for 2 to 3 minutes, or until they become softened and translucent. Next, add the minced garlic and chopped sun-dried tomatoes to the pan. Continue to cook for another minute or so, stirring constantly, until the garlic is fragrant – be careful not to burn it! This step creates a rich, aromatic foundation for your sauce.

Step 3: Simmer the Pasta to Perfection. Pour the chicken broth into the pan, deglazing the bottom to capture all the flavorful bits. Stir in the uncooked pasta, dried oregano, and the red pepper flakes (if you’re using them for a touch of heat). Bring the liquid to a rolling boil, then immediately reduce the heat to a gentle medium. Cover the skillet with its lid and let it simmer for approximately 15 minutes. Stir occasionally during this time to prevent the pasta from sticking to the bottom of the pan and to ensure even cooking. The pasta should become tender and most of the liquid should be absorbed. If it appears too dry before the pasta is cooked, you may add a splash more broth or water, but typically, this is not needed.

Step 4: The Creamy Finish. Once the pasta is perfectly tender, reduce the heat to its lowest setting. Stir in the heavy cream and grated Parmesan cheese until fully incorporated and the sauce begins to thicken slightly. Return the cooked chicken to the pan, nestling it into the creamy pasta. Continue to simmer over low heat for a few more minutes, allowing the flavors to meld and the sauce to achieve its luxurious consistency. Finally, stir in the fresh minced basil, releasing its bright aroma. Taste the dish and adjust the seasoning with additional salt and pepper as needed. Serve immediately, garnished with extra fresh basil and a sprinkle of Parmesan cheese for an exquisite touch.

Pro Cooking Tip for Creamy Sauces

A crucial tip for perfectly creamy pasta: once you introduce the heavy cream to the pan, maintain a very low heat. The goal is a gentle simmer, just barely bubbling. Avoid bringing the creamy sauce to a rapid boil, as high heat can cause the cream to separate or curdle. While the chicken and pasta will still be edible if this happens, the sauce won’t have that desirable smooth, attractive consistency. A low, slow simmer ensures a rich, emulsified, and beautifully velvety sauce every time.

Exciting Recipe Variations for Your Marry Me Pasta

While the classic Marry Me Chicken Pasta is a delight, these simple variations allow you to customize the dish to your preference, making it even more versatile and appealing for different tastes and dietary needs:

  • Embrace a Meatless Twist: Want to make this dish vegetarian? Easily transform it into “Marry Me Chickpeas” or “Marry Me Cannellini Beans.” Simply omit the chicken from the recipe. Instead, drain and rinse a can of chickpeas or cannellini beans and stir them into the sauce along with the cream and Parmesan. This provides a wonderful source of plant-based protein and fiber. Remember to substitute chicken broth with vegetable broth to keep it entirely vegetarian.
  • Utilize Leftover or Pre-Cooked Chicken: Short on time? If you have leftover cooked chicken on hand, this recipe becomes even quicker! Skip the initial step of cooking the chicken breast entirely. Instead, once the pasta is tender and you’re ready to add the cream and Parmesan, simply fold in your pre-cooked chicken. Whether it’s succulent grilled chicken thighs, tender air fryer chicken breasts, or even the convenience of shredded rotisserie chicken, any cooked chicken will work beautifully, adding depth and cutting down your prep time.
  • Add a Delightful Crispy Topping: For an extra layer of texture and a touch of gourmet flair, consider adding a crispy breadcrumb topping. In a small separate skillet, melt a pat of butter over medium-high heat. Add a handful of panko breadcrumbs along with a pinch of salt and pepper. Toast them, stirring frequently, until they turn golden brown and delightfully crunchy. Sprinkle these toasted breadcrumbs over individual servings of the pasta once plated. The satisfying crunch beautifully contrasts with the creamy, soft pasta, elevating the dish and giving it the comforting feel of a baked pasta without the extra oven time.

Perfect Pairings: What to Serve with Marry Me Chicken Pasta

This rich and creamy pasta dish can be a meal in itself, but pairing it with the right accompaniments can elevate your dining experience. Here are some simple yet effective serving ideas:

  • Crusty Bread for Sopping: No creamy pasta dish is complete without a delicious bread to soak up every last drop of that amazing sauce. Classic Texas Toast garlic bread is always a hit, or for something more artisanal, a slice of rustic Dutch oven bread works wonderfully. For a fun family favorite, try making homemade cheesy bread using this easy pizza dough recipe – it’s a guaranteed crowd-pleaser that perfectly complements the rich flavors of the pasta.
  • Fresh & Light Vegetables: To balance the richness of the pasta, incorporating fresh, lightly cooked vegetables is an excellent choice. Simply sautéed zucchini offers a mild, refreshing crunch, while crisp air fryer broccoli provides a vibrant green and earthy counterpoint. Another fantastic option is lightly sautéed spinach, which wilts quickly and adds a healthy dose of greens. For spinach lovers, you can even stir a couple of large handfuls of baby spinach directly into the sauce when you add the chicken and cream; it will wilt down beautifully in minutes.
  • A Simple Green Salad: Keep things light and refreshing with a crisp green salad. A classic house salad featuring mixed greens and a few simple vegetables offers a nice textural contrast and a refreshing palate cleanser. Dress it with a bright and tangy Italian dressing or a homemade red wine vinaigrette to cut through the creaminess of the pasta, making for a well-rounded and satisfying meal.

Storage & Reheating Guide

Ensuring your Marry Me Chicken Pasta leftovers are just as delicious can make your meal prep efforts even more rewarding. Here’s how to properly store and reheat this delightful dish:

Refrigerator Storage: Any leftover Marry Me Chicken Pasta should be transferred promptly to an airtight container or a dish securely covered with plastic wrap. Store it in the refrigerator for up to 3 days. Beyond this, the quality and freshness may start to diminish.

Freezer Considerations: Freezing pasta dishes made with cream-based sauces, like this one, can be a bit tricky. There’s a risk that the sauce may separate or develop a slightly grainy texture upon thawing and reheating due to the dairy content. Additionally, pasta itself can sometimes become bloated or mushy after being frozen and thawed. While not ideal, if you are willing to take the chance, place the cooled pasta in a freezer-safe bag, pressing out as much excess air as possible, or in an airtight freezer container. It can be frozen for up to 2 months. Always thaw it completely in the refrigerator before attempting to reheat.

Gentle Reheating: To reheat your Marry Me Chicken Pasta, the key is to do so gently to preserve the sauce’s creamy texture. Warm the pasta in a skillet over medium-low heat, stirring occasionally, until it’s heated through. Alternatively, you can use a microwave, heating in short bursts and stirring between each interval. If the sauce appears too thick or has separated slightly, add a splash of heavy cream or chicken broth to loosen it up and restore its luscious consistency. Remember to avoid high heat during reheating to prevent the cream from separating.

Marry Me Chicken Pasta transforms the beloved chicken recipe into a complete, flavorful one-pan meal. Enjoy tender chicken, penne pasta, and a rich, creamy sun-dried tomato sauce that’s sure to impress.

Ingredients

  • 3 tablespoons olive oil, divided
  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized cubes
  • ½ teaspoon kosher salt
  • ¼ teaspoon coarse ground black pepper
  • ½ cup finely diced onion (1 small onion)
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (see note)
  • 3 cups chicken broth
  • 8 oz. uncooked pasta (penne or rotini work well)
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tablespoon minced fresh basil, additional for garnish

Instructions

  1. Take the heavy cream out of the refrigerator so it can come to room temperature while you’re prepping the meal.
  2. Heat 2 tablespoons of olive oil in a large skillet (with lid available) over medium-high heat. When the pan is hot, add the chicken in a single layer, sprinkle with salt and pepper, and cook for 6 to 7 minutes, stirring occasionally, until browned on all sides and cooked through. Remove the chicken from the pan and set aside. Discard any accumulated juices.
  3. In the same pan over medium heat, heat 1 tablespoon olive oil; add the chopped onions and sauté for 2 to 3 minutes until softened. Add the minced garlic and sun-dried tomatoes and cook for an additional 1 minute until fragrant.
  4. Add the chicken broth to the pan. Stir in the uncooked pasta, oregano, and red pepper flakes (if using). Bring to a boil, then reduce the heat to medium.
  5. Cover the skillet and continue to cook for about 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender. Add more broth or water as needed. The majority of the liquid should be absorbed by the time the pasta has finished cooking.
  6. Once the pasta is cooked, reduce heat to low, and stir in the cream and Parmesan cheese. Return the chicken to the pan; simmer over low heat until sauce has thickened slightly. Stir in basil.
  7. Taste and adjust the seasoning, adding more salt and pepper, if desired. Garnish with additional fresh basil and additional Parmesan, if desired.

Notes

  • Sun-dried tomatoes: For this recipe, we prefer using sun-dried tomatoes that are not packed in oil. However, we tested it with tomatoes that are packed in oil and the recipe still works well. Using paper towels, pat the excess oil from the tomatoes before chopping them. If desired, you can use the oil from the jar instead of the olive oil in the recipe.
  • Using already cooked chicken: If you happen to have leftover chicken or rotisserie chicken, skip Step 2 (cooking raw chicken); proceed with recipe as directed, adding the cooked chicken to the pan with the cream.
  • Storage: Leftover chicken pasta can be refrigerated for up to 3 days. Reheat gently in a skillet or microwave until warmed through. Overheating can cause the sauce to separate. This creamy pasta does not freeze well.
