Prep the ramekins: Lightly butter four ramekins and dust
the insides with cocoa powder or flour. To do this, place a teaspoon of
flour or cocoa powder in a ramekin and gently tap and tilt the ramekin so
the entire surface is coated. Invert the ramekin to remove excess flour or
cocoa. Place the prepared ramekins on a sturdy baking pan for easy
transferring in and out of the oven.
Melt the chocolate: If you’re using a chocolate bar, chop
it into small pieces. Combine the chocolate and butter in a microwave-safe
bowl or large measuring cup. Microwave on high for 30 seconds and stir well.
Continue microwaving in 10-second intervals, stirring thoroughly each time,
until the chocolate and butter are melted and combined. Be careful not to
overheat. Alternatively, use a double boiler or a heat-safe bowl set over
simmering water.
Cool the chocolate: Let the melted chocolate mixture cool
for 5-10 minutes. If the mixture is too hot, it will cook the eggs, leading
to scrambled eggs instead of the desired lava cake texture.
Mix the cake batter: Crack two whole eggs into a medium
bowl. Separate the remaining two eggs, using only the yolks; save the whites
