Gradually add the remaining dry ingredients: salt, baking powder, and all-purpose flour. Mix on low speed until all ingredients are just combined and a soft, cohesive dough forms. Be careful not to overmix, which can lead to tough cookies.
  2. Divide the prepared dough in half. Leave one half in the mixing bowl and transfer the other half to a large sheet of waxed paper. To the dough remaining in the bowl, add a small amount of your chosen gel food coloring. Remember, a little gel color goes a long way, so start with a tiny dab and add more if you desire a deeper shade. Mix until the dough is evenly colored throughout.

Gently flip the colored dough rectangle directly on top of the uncolored dough rectangle. Trim the edges of the stacked dough to create a neat, uniform rectangle, ensuring both colors are precisely the same size. You can discard the extra dough, or combine it and roll into a small extra cookie if you wish (though it won’t have the spiral effect). Starting at one of the short ends, carefully roll the layered dough into a tight log. As you roll, use the waxed paper underneath to help guide and tighten the log. If the dough cracks at any point, simply press it back together with your fingers.
  4. Once you have a firm dough log, it’s time for sprinkles! Roll the dough log in your desired sprinkle colors. This step can get a bit messy, so consider doing it in a large tray or on a platter to contain any stray sprinkles. Wrap the sprinkle-coated log tightly in plastic wrap, then place it into two large drinking glasses or tall containers. This helps the log maintain its perfectly round shape while it chills. Refrigerate the dough for at least 1 to 2 hours, or until it is very firm. This chilling time is crucial for easy slicing and to prevent the cookies from spreading too much during baking.
  5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. Once the dough is firm, remove it from the refrigerator and unwrap it. Using a sharp knife, slice the dough into uniform 1/4-inch thick rounds. Arrange the sliced cookies on the prepared baking sheet, spacing them about 1 to 2 inches apart. Bake for 8-10 minutes, or until the edges are just slightly golden brown. The cookies should still be soft in the center when removed from the oven.
