  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon salt

Instructions 

  • Preheat oven to 425°F (220°C). For easy cleanup, line a rimmed baking sheet with parchment paper. Toss the chopped sweet potatoes with 1/2 teaspoon olive oil, salt, and pepper until evenly coated. Spread them in a single layer on the prepared baking sheet. Roast for 15 minutes, then gently toss the sweet potatoes to ensure even cooking. Continue roasting for another 5-10 minutes, or until they are fork-tender and slightly caramelized.
