coffee? Cookies are often my go-to. Recently, I’ve been enjoying
coffee cookies, packed with chocolate chips and made with espresso powder.

But nothing compares to the simple joy of coffee cake, especially
homemade streusel coffee cake. The crunchy, crumbly, cinnamon-infused
streusel is pure happiness for me.

Homemade Coffee Cake Recipe

This coffee cake recipe is made completely from scratch, unlike many
that use a boxed mix. You likely already have all the ingredients you
need in your pantry. Although the ingredient list may seem long at
first glance, you’ll notice that butter, flour, sugar, and cinnamon
are repeated in each layer.

Three Delicious Layers:

  • Moist and Buttery Cake
  • Sweet Cinnamon Filling
  • Crunchy Streusel Topping

To make the cake: Cream together butter, sugar, and
eggs until light and fluffy. Add the dry ingredients (flour, etc.)
alternating with sour cream. The cake batter will be thick.

Add the Filling: Sprinkle a simple mixture of sugar,
cinnamon, and a touch of cocoa (for color) onto the batter before
baking. Spread half of the batter in the pan, sprinkle the filling
mixture, and then top with the remaining batter.

Recipe Tip

Oops! You may have noticed in the photos that my streusel layer is
near the bottom. I must have divided the batter unevenly! It
doesn’t affect the coffee cake’s deliciousness one bit. It keeps us
humble, right?

Sprinkle on the Streusel: The streusel acts as the
“frosting,” so the cake is ready to serve straight from the oven.

Wondering if coffee cake has coffee in it? Some resourceful cooks may
have used leftover coffee in their cakes, but sour cream is usually
used, which provides a rich flavor and light texture.

Essentially, any sweet cake enjoyed with a cup of coffee can be called
a coffee cake. Coffee cakes typically have a streusel or crumb topping
that replaces frosting, so they’re ready to eat straight from the
oven. Many coffee cakes also include fruit, such as this

Coffee Cake Recipe Variations

  • Add Nuts: Add about 1/2 cup of chopped walnuts or
    pecans to the streusel mixture before baking. (I skip nuts due to
    family allergies, but they’re a great addition!)
  • Skip the Filling: The cake is still delicious
    without the cinnamon filling if you prefer.
  • No Sour Cream? Substitute Greek yogurt or
    buttermilk for the sour cream.
  • Elevated Version: Drizzle with a simple
    powdered sugar glaze

Storage Tips

This streusel coffee cake keeps well for 1 to 2 days at room
temperature.

To freeze: Wrap the cake tightly and freeze for up to 3
months. Let it thaw for about 90 minutes before serving.
