Grand Rapids, Michigan, has been our home for the past two years, and we absolutely adore it here. The food scene is thriving, with new restaurants constantly opening and many boasting long wait times due to their popularity.
Having previously lived in a more diverse area with a rich culinary landscape, especially Middle Eastern cuisine, we developed a deep appreciation for those flavors. Ben, who grew up in Dearborn, Michigan, had extensive exposure to authentic and incredibly delicious Middle Eastern food.

Before my marriage to Ben, I had limited experience with this type of food. Now, it’s my favorite. I crave fattoush, a Middle Eastern salad, like others crave ice cream. Lebanese red lentil soup is my go-to when I’m feeling under the weather. And, of course, the absence of hummus due to my child’s sesame allergy was a sad day (though a tahini-free hummus helps satisfy the craving!). Not to mention, tahini sauce, which is sadly off-limits these days.
Chicken shawarma, shish tawook, and chicken kofta are among my preferred chicken dishes. I also love tabbouleh salad, cucumber tzatziki sauce, and fattoush! My taste buds have evolved over the years living in that area.

I frequently incorporate these flavors into my recipes, knowing how much I love them and that many of you do, too! These grilled chicken shawarma drumsticks are ideal for summer grilling, requiring less than 30 minutes of hands-on time.

About These Grilled Chicken Shawarma Drumsticks
Drumsticks are an affordable and kid-friendly option, perfect for a busy summer evening. Serve them with roasted potatoes, grilled vegetables, rice, or your favorite salad.
The flavorful marinade is based on lemon and olive oil, enhanced by classic shawarma spices: garlic, paprika, turmeric, pepper, cumin, and coriander. If you enjoy a bit of heat, add a pinch of cayenne pepper to the marinade.

- Air Fryer Method: Marinate the drumsticks as directed and cook them in your air fryer instead of grilling.

- Reheat: Individual portions can be reheated in the microwave at 50% power until warmed through. Be careful not to overheat them, as they can become tough. Larger amounts can be wrapped in foil and heated in a 350°F (175°C) oven for 10-15 minutes, or until heated through.
