  • ½ cup unsalted cold butter, diced
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 3 to 5 tablespoons ice water

FOR THE FILLING:

  • 3 ½ cups mixed fresh berries (such as blueberries, strawberries, blackberries, raspberries)
  • 3 tablespoons honey
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 tablespoon tapioca starch (or cornstarch)

FOR THE EGG WASH:

  • 1 large egg
  • 1 tablespoon water
  • 1 to 2 tablespoons coarse sugar (or turbinado sugar)

Instructions

  1. Add flour, diced butter, sugar, and salt to a food processor. Pulse a few times until the mixture becomes crumbly with butter broken into small lumps.
  2. Add ice water, 1 tablespoon at a time, pulsing a few times after each addition. Add only enough water so that the dough sticks together when pressed between your fingers (typically 3-5 tablespoons).
  3. Place dough onto a lightly floured surface and press into a ball or disc. Wrap with plastic wrap and chill in the refrigerator for 20 to 30 minutes while you prepare the filling.
  4. Preheat oven to 400ºF (200ºC). Line a large rimmed baking sheet with parchment paper.
  5. Gently rinse the berries with cold water. Drain and remove as much excess water as possible. If berries are large, cut them into bite-sized pieces.
