Meal Plan #8: Your Delicious Week at a Glance
Here’s what’s on the menu this week! Click here to download and print the meal plan and grocery list!
Monday: Pasta Amatriciana – This recipe makes 8 servings, perfect for leftovers for lunch or another dinner. It also freezes well. Serve it with a simple green salad (included on the grocery list!) to complete the meal.
Tuesday: Shrimp Salad with Mango and Avocado – Double the recipe to make four servings (the grocery list reflects this). If you have extra jalapeño peppers, cilantro, avocado, and red onion, save them to top the enchiladas on Friday, if desired.
Wednesday: Roasted Bone in Chicken Breasts and Rosemary Roasted Potatoes – Prepare a double batch and refrigerate half of the chicken for Friday’s dinner. Each serving is one-half of a chicken breast (about 8 oz.). Serve with the potatoes, baking them on separate pans at the same time. Round out the meal with your favorite vegetable or a bagged salad (included on the grocery list).
Thursday: Chunky Cheeseburger Soup – This recipe makes 8 servings. Save the leftovers for another dinner or lunch! We’ve included green onions on the grocery list instead of chives, as they can also garnish Friday’s enchiladas.
Friday: Chicken Enchiladas Verde – This recipe is very versatile! You can add vegetables to the enchiladas, like grilled peppers and onions, or a can of rinsed and drained black beans (add to your grocery list if you decide to). Instead of salsa verde, try using red enchilada sauce or homemade salsa verde. Optional garnishes include sliced green onion, chopped red onion, cilantro, jalapeño pepper, avocado, sour cream, and fresh tomatoes.
Bonus: Whole Wheat Chocolate Chip Cookies – These cookies are a crowd-pleaser! They store well or can be frozen. The dough can also be frozen for up to 2 months, so you can bake fresh cookies as needed.
