This vegetarian lasagna soup is incredibly creamy, wonderfully comforting, and bursting with a colorful array of fresh vegetables. It’s all cooked in a single pot in less than an hour, making it an ideal choice for a delicious and easy meal.

Ingredients

  • 1 tablespoon olive oil
  • ½ large yellow onion, finely diced (about ½ cup)
  • 1 red bell pepper, diced
  • 1 teaspoon kosher salt
  • ½ teaspoon coarsely ground black pepper
  • 16 ounces mushrooms, sliced (see note for shortcut)
  • 1 cup shredded carrots (see note for shortcut)
  • 1 clove garlic, minced
  • 5 ounces baby spinach
  • 1 tablespoon dried oregano
  • 1 teaspoon dried parsley
  • 2 teaspoons dried basil
  • 4 cups no salt added vegetable broth
  • 2 cups water
  • 10 lasagna noodles, whole wheat, broken into pieces (ensure they are NOT the no-boil kind)
  • 1 small zucchini, julienned or shredded
  • 1 small summer squash, julienned or shredded
  • 1 cup half and half (or heavy cream, if you prefer a richer soup)

Optional Cheese Topping Ingredients:

  • 1 cup part-skim ricotta cheese
  • ½ cup shredded or grated parmesan cheese
  • ½ cup shredded part-skim mozzarella cheese
  • fresh basil, to garnish

Instructions

  1. In a large, heavy-bottomed soup pan or Dutch oven, heat the olive oil over medium-high heat. Add the diced yellow onions and red bell pepper, seasoning them generously with kosher salt and freshly ground black pepper. Sauté these vegetables, stirring occasionally, until the onions become soft and translucent, which typically takes about 5 minutes. Next, add the sliced mushrooms to the pot. Continue to cook, allowing the mushrooms to release their moisture and brown lightly, developing a deeper, richer flavor.
  2. Stir in the shredded carrots and minced garlic into the vegetable mixture. Cook for an additional 1 to 2 minutes, or until the garlic becomes wonderfully fragrant, being careful not to let it burn. Then, add the baby spinach and all the dried herbs (oregano, parsley, and basil) to the pot. Continue stirring until the spinach completely wilts down and integrates into the vegetables.
  3. Pour in the vegetable broth and water. Bring the entire mixture to a rolling boil. Once boiling, add the broken lasagna noodles, stirring well to ensure they are fully submerged and don’t stick together. Cook the pasta for approximately 9 minutes, or according to the package directions, stirring frequently to ensure even cooking and to prevent sticking to the bottom of the pot.
  4. Once the pasta is tender and cooked through, add the julienned or shredded zucchini and summer squash to the soup. Cook for just 1 to 2 minutes more, allowing them to soften slightly while retaining a bit of their crispness. At this stage, if the soup appears too thick for your liking, you can add a little extra water or broth. Remember, you’ll be incorporating more liquid when you add the half & half shortly.
  5. Remove the pot from the heat. Slowly and gradually stir in the half & half until it is fully incorporated, creating a creamy texture. Taste the soup and adjust the seasoning as needed, adding more salt and pepper to enhance the flavors to your preference. Return the pot to a very low heat setting merely to keep the soup warm; do not allow it to boil after adding the dairy.
  6. While the soup is simmering and finishing, prepare the optional cheese topping. In a small mixing bowl, combine the part-skim ricotta cheese, shredded or grated Parmesan cheese, and shredded part-skim mozzarella cheese. Mix them thoroughly until well combined.
  7. To serve, ladle generous portions of the hot vegetarian lasagna soup into individual bowls. Immediately before serving, crown each bowl with a spoonful of the creamy cheese mixture.
