Easy Homemade Chicken Enchiladas Verde Recipe
This Chicken Enchiladas Verde recipe is a true family favorite, delivering a delicious and satisfying meal. These enchiladas are packed with tender shredded chicken, plenty of melty cheese, soft tortillas, and a flavorful verde (green) sauce. Serve them with a side of homemade refried beans, Mexican rice, tortilla chips, and a generous helping of salsa, for a restaurant-quality feast in your own home.
The best part? This dinner is both quick and easy to make! You can have this meal on the table in about an hour, with half the time dedicated to baking. The recipe is simplified with store-bought salsa verde and pre-cooked chicken, saving you valuable time in the kitchen.
You can also prepare these enchiladas ahead of time, making them perfect for busy weeknights. Assemble the enchiladas in the morning, refrigerate them, and bake when you return home in the afternoon. It’s a convenient way to enjoy a home-cooked meal even on your busiest days.

Ingredient Notes for Chicken Enchiladas Verde
- Cooked Shredded Chicken: The recipe requires 3 cups of cooked, shredded chicken. You can use a rotisserie chicken from the deli, leftover cooked chicken, or even turkey. I often cook a batch of boneless, skinless chicken breasts or thighs in my Instant Pot for easy access to shredded chicken, keeping it in the freezer for recipes like this.
- Jar of Salsa Verde: This green salsa is made with tomatillos instead of tomatoes, and typically isn’t as spicy as red enchilada sauce. Look for a 16 oz. jar at your local grocery store. Alternatively, you can make your own salsa verde from scratch.
- Monterey Jack Cheese: For the best melt and flavor, shred your own Monterey Jack cheese. Feel free to experiment with other cheeses if you have preferences.
- Onion: Use any type of onion you like, such as white, yellow, sweet, or red.
- Flour Tortillas: While traditional enchiladas use corn tortillas, this recipe calls for 8-inch flour tortillas. Flour tortillas hold their shape better without the need for frying, which is often done with corn tortillas.
- Fresh Cilantro: Some chopped cilantro goes into the filling, but reserve some for garnishing the finished enchiladas.
How to Make Chicken Enchiladas Verde

Prepare the Filling: Start by sautéing the chopped onions in a small skillet until they soften. If you want to increase the vegetable content, add some spinach, bell peppers, corn, or black beans. Mix these cooked vegetables with the shredded chicken, part of the salsa verde, and some of the cheese.
Fill the Tortillas: Spoon the chicken filling into each tortilla and roll them up. Place the filled tortillas seam-side down in a baking dish. Drizzle the remaining salsa verde over the enchiladas and sprinkle with the remaining cheese.
Bake: Place the baking dish in a preheated oven and bake until the filling is warm and the cheese has melted and is lightly bubbly. The cheese should be melted and golden. The bake time is typically around 25-35 minutes.
Serve: Garnish the Chicken Enchiladas Verde with sour cream and fresh cilantro. Additional toppings like chopped tomatoes, jalapeños, pickled red onions, or diced avocado can enhance the flavor. Serve the enchiladas with baked tortilla chips and pico de gallo for a complete and festive meal. A frozen sangria slushie or a cranberry margarita is a great addition for a party!

More About Salsa Verde
Salsa verde is a flavorful, chunky sauce made from tomatillos, hot peppers, and onions. It is often referred to as green enchilada sauce. Unlike enchilada sauce, which is a smooth tomato-based red sauce with chili powder and seasonings, salsa verde offers a fresh, bright flavor profile.
How Spicy is Salsa Verde? Generally, salsa verde tends to be milder than red enchilada sauce. However, the heat level can vary depending on the brand and type you choose. Homemade versions can also vary greatly, depending on the peppers used. Some salsa verdes can pack a significant amount of heat!

Easy Recipe Variations
- Make it Vegetarian: Replace the chicken with fajita-style vegetables (grilled onions and bell peppers). You can also add a can of black beans to the filling.
- Swap the Protein: Instead of chicken, try slow cooker pork taco meat. Alternatively, use my recipe for healthy taco meat or, for a different twist, try my beef enchiladas.
- Use Enchilada Sauce: If you’re not a fan of salsa verde, use the same amount of red enchilada sauce. It’s often readily available in cans and easy to find. For a homemade option, try my enchilada sauce recipe, which uses pantry ingredients.

Make-Ahead Tips
You can prepare these Chicken Enchiladas Verde a day ahead of time. Assemble the enchiladas and refrigerate them before baking. When ready to bake, increase the baking time by five to ten minutes.
Another option is to make a double batch and freeze half of the enchiladas for later. See the section below for details on freezing.

Storage & Reheating Guide
Refrigerate/Freeze: Leftover baked enchiladas can be stored in the refrigerator for up to three days. For longer storage, freeze them for up to three months.
Reheat: To reheat individual portions, microwave them until warmed through. For larger quantities, cover the enchiladas with foil and reheat in the oven.
To Reheat Frozen Uncooked Enchiladas: Thaw the enchiladas overnight in the refrigerator and bake as directed, adding five to ten minutes to the baking time. Alternatively, you can bake them from frozen. Preheat your oven, leaving the foil on, for 25 minutes. Then, remove the foil and bake for an additional 20-25 minutes, or until the cheese is melted, and the enchiladas are heated throughout.
