Growing up, summer meant one thing: blueberry picking! My family would head to the blueberry patch, armed with a picnic and plenty of snacks. While my sister and I weren’t always thrilled about the picking itself, the real fun began when we got home. My mom would transform our haul into a blueberry bonanza.
We’d savor everything from blueberry jam to blueberry muffins and pancakes. Blueberry sauce, blueberries on cereal and in oatmeal, plus plenty for snacking – we devoured them all! Mom always froze some to enjoy during the winter months, extending the blueberry season all year long.
One of our absolute favorites was, and still is, this fresh blueberry pie. It’s a true summer treat that I make whenever I can get my hands on fresh, juicy blueberries. It’s so good, my mother-in-law declared it “one of the best pies she’s ever had.” I’m confident you’ll love it too!

Easier Than Baked Pies: This is one of the easiest pies you can make, and it consistently turns out perfectly! Unlike traditional baked pies, half of the blueberries are cooked on the stove to create a luscious filling, while the other half are added fresh. It’s a phenomenally delicious, no-fuss dessert.
No-Bake Delight: The best part? It’s a no-bake pie! The filling doesn’t require any baking, making it ideal for hot summer days. Simply prepare your crust (pre-baked if necessary) and you’re well on your way to a delightful treat.

- Pie Crust: Choose your favorite! You can make a homemade pastry crust, or opt for a store-bought frozen, refrigerated, or boxed crust. Graham cracker or cookie crusts work wonderfully too.
- Blueberries: You’ll need a total of six cups: three cups will be cooked, and three cups will be added fresh. For the best flavor, use fresh, in-season blueberries.

- Granulated White Sugar: You’ll need a cup and a half of this for the perfect sweetness.
- Cornstarch: This acts as a thickener, giving the filling the ideal consistency. Cornstarch is a white powder made from the endosperm of corn kernels, and you can usually find it in the baking aisle of your local grocery store. It’s also naturally gluten-free!
- Salt: A pinch of salt enhances the flavors of the filling, preventing it from tasting flat. Don’t skip it!
- Water: Half a cup of water helps to create the cooked blueberry mixture. You could potentially use fruit juice, but water works perfectly fine.
- Butter: Unsalted butter is stirred into the filling after it’s cooked, adding richness and flavor.
- Fresh Lemon Juice: A squeeze of fresh lemon juice brightens up the blueberry filling, adding a touch of tartness to balance the sweetness.
- Whipped Cream: While optional, whipped cream is highly recommended! It complements the pie beautifully. Vanilla ice cream is another delicious option.

How to Make Fresh Blueberry Pie
Get Started with the Crust: Begin by preparing the pie shell of your choice. You’ll need a nine-inch pie plate. Since this is a no-bake pie, your crust will need to be pre-baked and cooled. Follow the instructions on the package if you’re using a store-bought crust, or prepare your homemade crust as you normally would for an unbaked pie shell. If you’re using a graham cracker or cookie crust, you may not need to bake it at all.

Pie Weights
Empty pie shells sometimes form air bubbles or shrink away from the sides of the pie plate when they are in the oven. To prevent this, use pie weights inside the crust while you blind bake it. Prep the Blueberries: Rinse the fresh blueberries under cold running water, and carefully sort out any stems, leaves, or mushy berries. Measure out three cups of the blueberries for the cooked portion. Then, spread the remaining three cups of berries on a clean towel or paper towel to dry.

Cook Half the Berries: For the cooked berry portion, you’ll need a good-sized saucepan. In the pan, mix three cups of blueberries with the sugar, a pinch of salt, and the cornstarch. Pour in the half cup of water and heat the mixture over medium heat. Bring it to a boil, and then continue boiling for two minutes. This step is important! The berry mixture will become very thick, and some of the blueberries will begin to burst. The filling should look clear, not cloudy. Remove the pan from the heat.

Stir in a dab of butter and the fresh lemon juice. It’s important to let the hot mixture cool down for fifteen to twenty minutes. It doesn’t have to be chilled but it shouldn’t be boiling hot.

Add the Fresh Blueberries: Once the cooked blueberry mixture has cooled, gently fold in the remaining three cups of fresh blueberries. Pour the mixture into your prepared pie shell, and smooth the top. Then, chill the pie in the refrigerator for a couple of hours until it’s firm. Patience is key, but it’s worth the wait!

Serve and Enjoy: Slice the pie into wedges and savor every bite! Top your fresh blueberry pie with homemade whipped cream. In a pinch, you can use canned whipped cream, but homemade is infinitely better. Homemade vanilla bean no-churn ice cream is also a fantastic accompaniment.
