Ingredients

  • 1 pkg. (14 ounce) extra-firm tofu
  • 3 tablespoons olive oil, divided
  • ¼ teaspoon kosher salt
  • ¼ teaspoon coarse ground black pepper
  • ¼ teaspoon garlic powder
  • 2 medium carrots, peeled and cut into ¼ -inch slices
  • 1 small red onion, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 2 cups fresh broccoli florets
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon cornstarch

For the Sauce:

  • ¼ cup creamy peanut butter, sunflower seed butter, or almond butter
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon grated ginger root
  • 1 clove garlic, minced
  • Steamed rice, for serving (optional)
  • Green onions and/or chopped salted peanuts, for garnishing

Instructions

  1. Remove the tofu from its packaging and discard the water. Gently pat the block of tofu completely dry with paper towels. Slice the tofu block evenly into 3 large slabs. Keeping the stack intact, cut the 3 slices into uniformly sized cubes, about ½-inch large (aim for consistency for even cooking).

  2. Line a rimmed baking sheet with several layers of paper towel or a clean, lint-free dish towel. Arrange the tofu cubes in a single, even layer on top of the towel. Place another layer of toweling on top, followed by a flat, heavy object (such as another baking sheet or a cutting board topped with heavy cans or a cast iron pan) to press out moisture. Allow the tofu to drain for a minimum of 30 minutes.
  3. Preheat your oven to 400ºF (200°C) with the rack in the center position.
  4. In a large bowl, combine 2 tablespoons of olive oil, kosher salt, coarse ground black pepper, and garlic powder. Add the prepared carrots, onion, bell pepper, and broccoli. Toss vigorously to ensure all vegetables are evenly coated. Spread the seasoned vegetables in a single layer on one side of your sheet pan.

  5. Using the same bowl, add the drained and pressed tofu cubes. Drizzle with the remaining 1 tablespoon of olive oil and the reduced-sodium soy sauce; toss gently to combine. Sprinkle the cornstarch over the tofu, then gently stir or toss again until all pieces are lightly and evenly coated.

  6. Carefully add the coated tofu to the sheet pan, arranging it in a single layer alongside the vegetables. Ensure there is enough space between all ingredients for optimal roasting. Bake for 25-30 minutes, or until the tofu is golden brown and crispy, and the vegetables are tender-crisp. Stir all ingredients once after about 15 minutes of baking for even results.
  7. Meanwhile, prepare the delicious peanut sauce. In a small bowl or measuring cup, combine all sauce ingredients: creamy peanut butter (or alternative), reduced-sodium soy sauce, sweet chili sauce, rice vinegar, toasted sesame oil, grated ginger root, and minced garlic. Whisk vigorously with a small whisk or fork until completely smooth and well combined. Taste and adjust seasonings as desired.

  8. Once the tofu and vegetables are fully cooked and nicely browned, remove the sheet pan from the oven. Drizzle the prepared peanut sauce generously over the entire pan.
