Instructions 

  1. Rinse the farro thoroughly in a fine mesh strainer under cold running water. Continue rinsing until the water runs clear, ensuring any dust or debris is removed.

  2. Add the rinsed farro, 3 cups of water (or broth), 1 tablespoon of olive oil (if desired), and ½ teaspoon of salt to the Instant Pot. Stir all ingredients together gently to combine.

  3. Secure the lid on your Instant Pot and ensure the sealing valve is set to the “Sealing” position (if applicable for your model). Allow approximately 10 minutes for the Instant Pot to come to full pressure before the cooking countdown begins.
  4. Once the cooking time has elapsed, let the Instant Pot perform a Natural Pressure Release (NPR) for 10 minutes. This means do not touch the valve; let the pressure release on its own. After 10 minutes, carefully turn the sealing valve to the “Venting” position to release any remaining pressure. The farro should be tender, firm, and wonderfully chewy.
  5. Carefully remove the lid. If there is any excess water remaining, drain it thoroughly using a fine-mesh strainer. Fluff the farro with a fork. Serve immediately while warm, or allow it to cool slightly before storing for meal prep (refer to note #2 for storage details).

  1. About farro: For optimal results with this recipe, we used Bob’s Red Mill pearled farro during testing. It’s important to differentiate between pearled and whole grain farro, as they have different cooking times. Pearled farro, which has its outer bran layer partially or fully removed, cooks much quicker and typically does not require pre-soaking. Most farro varieties available in standard grocery stores are pearled. If you use whole grain farro, it will require a longer cooking time and usually benefits from an overnight soak.
  2. Storage: Cooked farro is excellent for meal prep. It can be stored in an airtight container in the refrigerator for up to 5 days. To freeze cooked farro, spread it in a single layer on a parchment-lined baking sheet and freeze until solid. Once frozen, transfer the individual grains to a freezer-safe bag or container, where it will keep for up to 3 months. This method prevents clumping, allowing you to easily portion out what you need.
  3. Stovetop instructions: If you don’t have an Instant Pot, you can still enjoy delicious farro. Bring 4 cups of water to a rolling boil in a medium-sized saucepan.
