  • While the peppers are cooling, heat the olive or avocado oil in a large pot over medium heat. Add the chicken pieces, diced onion, kosher salt, and black pepper. Cook for 5 to 6 minutes, stirring frequently, until the chicken is lightly browned and the onions have softened and become translucent.
