Essential Ingredient Notes for Your Perfect Wedge Salad

Crafting the perfect wedge salad begins with selecting quality ingredients. Each component plays a crucial role in achieving the harmonious balance of flavor and texture that makes this dish so iconic. Here’s a closer look at what you’ll need and how to choose the best:

  • Iceberg lettuce: The undisputed star of this salad! For the best results, seek out a head of iceberg lettuce that is vibrant green on the outside, firm to the touch, and surprisingly heavy for its size. A pale, white stem is a good indicator of freshness, while a brown stem suggests it’s past its prime. Choose a large head to ensure you can cut substantial, impressive wedges that will hold up beautifully under the dressing and toppings.
  • Bacon: Crispy bacon bits are non-negotiable for that salty, smoky crunch. You can prepare your bacon using any method you prefer – pan-frying, baking, or even in an air fryer. I often prepare a full package of baked bacon in advance and store it in the refrigerator or freezer for quick use in salads or other dishes. If you prefer, turkey bacon can be a lighter alternative, or for a vegetarian wedge salad, plant-based bacon alternatives work wonderfully.
  • Cherry tomatoes: These small, sweet bursts of flavor add a vital touch of color and acidity. While any firm tomato will work, cherry tomatoes are ideal because they require minimal preparation – just a quick halve. If using larger tomatoes, make sure to dice them into bite-sized pieces to ensure they distribute evenly across the wedge.
  • Red onion: Finely diced red onions offer a beautiful color contrast and a pungent, zesty kick that cuts through the richness of the dressing. For a milder onion flavor, thinly sliced shallots or green onions make excellent alternatives. If you find red onions too strong, consider soaking the diced pieces in ice water for about 10-15 minutes before serving to temper their sharpness.
  • Crumbled blue cheese: This pungent, creamy cheese is fundamental to the authentic wedge salad experience. Not only is it generously crumbled over the top of the salad, but it also forms the backbone of our homemade dressing, infusing it with its characteristic tangy depth. Choose a good quality blue cheese for the best flavor.
  • Sour cream and mayonnaise: These two ingredients are the dynamic duo that creates the incredibly rich, thick, and creamy base for our homemade blue cheese dressing. Their combination is essential for achieving that luxurious, clingy texture that coats the lettuce wedge perfectly without making it soggy. Avoid thinner dressings, as they tend to run off the lettuce.
  • Fresh parsley: Fresh herbs are key to bright, vibrant flavors. Minced fresh parsley adds a lovely herbaceous note and a pop of green to the dressing. While dried parsley is convenient, it simply cannot replicate the fresh flavor and aroma that fresh parsley brings to this recipe.
  • White wine vinegar: A small splash of white wine vinegar is crucial for balancing the richness of the creamy dressing. It introduces a subtle tanginess and acidity that brightens the overall flavor profile, preventing the dressing from being too heavy.
  • Seasonings: The dressing is simply seasoned with kosher salt, garlic powder, and freshly ground black pepper. These basic seasonings enhance the natural flavors of the other ingredients without overpowering the distinctive taste of the blue cheese.
  • Milk: Use milk sparingly and only as needed to achieve the desired consistency for your dressing. You want the dressing to be thick enough to cling to the lettuce, but still pourable enough to drizzle easily. Start with a small amount and add more only if necessary.

How to Prepare the Perfect Wedge Salad

Creating this stunning wedge salad is a straightforward process, broken down into a few simple steps. The key is to prepare each component with care to ensure a harmonious and delicious final dish. Follow these instructions for a perfect salad every time:

1. Prepare the Irresistible Dressing: Begin by making your homemade blue cheese dressing, which truly elevates this salad. In a medium bowl, combine the creamy sour cream, rich mayonnaise, half a cup of the crumbled blue cheese (reserve the rest for topping!), finely minced fresh parsley, tangy white wine vinegar, kosher salt, aromatic garlic powder, and a dash of ground black pepper. Stir all these ingredients thoroughly until they are well combined and the dressing is smooth and consistent. Once mixed, cover the bowl and refrigerate the dressing. This allows the flavors to meld beautifully and ensures it’s perfectly chilled when you’re ready to serve. You can even prepare this dressing a day in advance to save time!

2. Cook the Crispy Bacon: For those coveted crispy bacon bits, start by chopping your uncooked bacon into small, uniform pieces, about ¼ inch in size. Heat a skillet over medium heat and add the chopped bacon. Cook, stirring occasionally, until the bacon pieces are beautifully golden brown and delightfully crisp. Once cooked, transfer the crispy bacon to a plate lined with paper towels to cool and drain any excess grease. This step is crucial for achieving that irresistible crunchy texture without making the salad greasy.

Expert Tips for Prepping Your Iceberg Lettuce

Properly preparing your iceberg lettuce is essential for a truly outstanding wedge salad. Start by removing any limp or discolored outer leaves from the head of lettuce. Give the entire head a light rinse under cool running water. There’s no need to meticulously wash each inner leaf; a gentle rinse of the exterior is sufficient. The most critical step is to thoroughly dry the lettuce before proceeding. Use clean paper towels or a fresh dish towel to pat it dry, ensuring there’s no residual moisture. Wet lettuce will not only dilute your delicious dressing but also cause the crisp leaves to wilt prematurely, compromising the signature crunch of this classic salad. For cutting, carefully halve the head from top to bottom, then cut each half into two even quarters. Make a small diagonal cut to remove the tough core from each wedge, ensuring a tender bite throughout.

A perfectly cut head of iceberg lettuce sits on a cutting board, quartered with its core removed, alongside a chef's knife.
A hand gently holds a quartered wedge of crisp iceberg lettuce, highlighting its firm, light green layers, ready for salad assembly.

3. Assemble Your Stunning Salad: Now for the grand finale – assembly! Carefully place each prepped lettuce wedge on individual salad plates. For ease of eating and a more elegant presentation, I highly recommend using larger-sized salad plates. Retrieve your chilled blue cheese dressing from the refrigerator. Give it a good stir and taste to adjust seasonings; you might want a pinch more salt or pepper. If the dressing seems too thick to drizzle easily, gradually stir in 2 to 3 tablespoons of milk until it reaches a thick yet pourable consistency. Remember, it should be thick enough to cling beautifully to the top of the lettuce wedge. Generously drizzle the dressing over each lettuce wedge.

4. Add the Perfect Toppings: Once dressed, it’s time to load up your wedges with flavor and texture. Sprinkle the crispy bacon crumbles evenly over each salad. Next, add the vibrant halved cherry tomatoes and the finely diced red onion. Finally, scatter the reserved blue cheese crumbles generously over the top. The more, the merrier!

5. Serve and Enjoy: For a final flourish, finish your wedge salad with a few generous grinds of coarse black pepper. Serve immediately to ensure maximum crispness and freshness. For those who love extra dressing, always offer a small bowl on the side so guests can add more to their liking. This salad is best enjoyed fresh, allowing the distinct textures and bold flavors to shine through.

Exciting Recipe Alternatives & Customizations

While the classic wedge salad is perfect as is, it’s also wonderfully adaptable! Don’t be afraid to experiment and tailor this recipe to your unique preferences or dietary needs. Here are some fantastic alternatives to consider:

  • Take a shortcut with store-bought dressing: If you’re pressed for time or simply prefer convenience, don’t hesitate to use your favorite creamy bottled dressing. A good quality ranch, Caesar, or even a creamy Italian dressing can work well in a pinch, though the homemade blue cheese dressing offers unparalleled flavor.
  • Explore other creamy dressing options: Blue cheese dressing is the traditional choice, but if it’s not to your taste, a creamy dressing is still the way to go for that signature richness. Consider swapping it for our delicious homemade ranch dressing or a vibrant green goddess dressing. Both offer a different but equally delightful creamy profile.
  • Tame or swap the onions: Red onions provide a sharp, zesty flavor, but their intensity isn’t for everyone. To mellow their bite, finely dice the red onion and soak it in a bowl of ice water for about 10-15 minutes before adding to the salad. This simple trick significantly reduces their pungency. If you’re still not a fan, try milder alternatives like thinly sliced chives, green onions, or even a sprinkle of our quick pickled red onions for a sweet and tangy twist. Or, you can simply omit them entirely!
  • Enhance with an egg: A popular and hearty variation of the classic wedge salad involves adding hard-boiled eggs. Sliced or quartered, hard-boiled eggs introduce an extra layer of protein and a delightful creamy texture. Making them is easier than ever with recipes like our Instant Pot hard-boiled eggs or air fryer boiled eggs!
  • Boost the greens: While iceberg is traditional, you can add a handful of other greens like romaine or butter lettuce for extra flavor and nutrients, tucking them under or alongside the iceberg wedge.
  • Add extra crunch: Toasted pecans, walnuts, or croutons can provide another layer of satisfying crunch.
  • Spice it up: A pinch of red pepper flakes in the dressing or sprinkled over the top can add a subtle kick.

Perfect Pairings: What to Serve With A Wedge Salad

The wedge salad is a versatile culinary companion, known for its ability to complement a wide range of dishes. Its refreshing crunch and rich flavors make it an excellent partner for hearty mains. Here are some top recommendations for what to serve alongside your classic wedge salad:

Steak: There’s a reason why wedge salads are a steakhouse staple – they’re the ultimate pairing for any cut of beef. The cool, crisp lettuce and tangy blue cheese dressing beautifully cut through the richness of a juicy steak. Serve yours with succulent air fryer steak bites for a quick and easy meal, or elevate your dinner with a comprehensive steak sheet pan dinner that brings together all the flavors in one go.

Pork: Pork dishes, with their often savory and robust profiles, also find a perfect partner in the fresh and zesty wedge salad. The acidity and creaminess of the dressing balance the richness of pork beautifully. This classic wedge salad recipe would be an excellent accompaniment to a flavorful spice-rubbed pork tenderloin or a tender air fryer pork tenderloin. Don’t forget to try it with golden, oven-baked herb and Parmesan crusted pork chops for a truly satisfying meal.

Chicken: For a lighter yet equally delicious meal, pair your wedge salad with a variety of chicken dishes. The refreshing qualities of the salad provide a wonderful contrast to grilled or roasted chicken. While you prepare your salad, cook up some flavorful Instant Pot chicken thighs for a quick weeknight dinner, or enjoy the smoky char of grilled chicken thighs. The combination offers a balanced and immensely satisfying dining experience.

Burgers & Sandwiches: Elevate a simple burger or deli sandwich from ordinary to extraordinary by serving it with a wedge salad instead of fries. The freshness provides a perfect contrast to rich, savory fillings.

Fish: A delicate white fish or a pan-seared salmon can also be beautifully complemented by the crispness and creamy dressing of a wedge salad, offering a fresh, light balance.

Storage and Make-Ahead Tips

For the freshest and crispest wedge salad experience, it’s highly recommended to store each component separately and assemble just before serving. However, if you have already assembled the salad, it can still last for about a day in an airtight container in the refrigerator, though the lettuce may soften slightly.

  • Lettuce: To keep leftover lettuce wedges crisp, wrap them individually in a slightly damp paper towel. Then, place them in a zip-top plastic bag or an airtight container. Store them in the crisper drawer of your refrigerator for up to 2 days. This moisture-retaining method helps prevent wilting.
  • Dressing: Any remaining homemade blue cheese dressing should be transferred to an airtight container. It can be refrigerated for 3 to 4 days. It’s common for the dressing to separate a bit in the fridge, so simply give it a good stir or a vigorous shake before each use to restore its creamy consistency.
  • Toppings: Store your cooked bacon bits, diced red onion, halved tomatoes, and extra blue cheese crumbles in separate airtight containers in the refrigerator. The crispy bacon will remain fresh for up to 3 days. Tomatoes and onions are best consumed within 2 days for optimal freshness and texture. The blue cheese crumbles will last as long as the expiration date printed on their original package, ensuring you have fresh, flavorful toppings ready to go.

This classic wedge salad recipe is an all-purpose side salad that comes together with minimal effort. You’ll make this one again and again!

Ingredients

For the dressing

  • 4 oz. container blue cheese crumbles, divided
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon white wine vinegar
  • ¼ teaspoon kosher salt, more if needed
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon coarse ground black pepper, more if needed
  • 2 to 3 tablespoons milk, as needed to thin dressing

For the salad

  • 4 slices bacon (about 4 oz.)
  • 1 head iceberg lettuce
  • 1 cup halved cherry tomatoes
  • 2 tablespoons finely diced red onion (see note)

Instructions

  • Remove ½ cup of blue cheese crumbles from the container. Reserve the remaining blue cheese to garnish the salad; refrigerate until needed.
4 oz. container blue cheese crumbles, divided
  • Combine sour cream, mayonnaise, ½ cup blue cheese, parsley, vinegar, salt, garlic powder, and pepper in a small bowl. Cover and refrigerate while you prepare the rest of the salad.
½ cup sour cream, ¼ cup mayonnaise, 1 tablespoon minced fresh parsley, 1 teaspoon white wine vinegar, ¼ teaspoon kosher salt, more if needed, ¼ teaspoon garlic powder, ⅛ teaspoon coarse ground black pepper, more if needed
  • Chop bacon into ¼ inch pieces. In a frying pan over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate to drain excess grease; set aside.
    4 slices bacon
  • Remove wilted outer leaves from the head of lettuce and rinse it lightly. Dry the lettuce as much as possible, using paper towels or a clean dish towel. To make wedges, cut the lettuce into quarters (cut in half top to bottom, and then cut each half in half again). Make a small diagonal cut to remove the core from each wedge. Place each lettuce wedge on individual salad plates.
    1 head iceberg lettuce
  • Remove dressing from refrigerator; taste and season it with salt and pepper, if necessary. If you feel that the dressing is too thick to drizzle, stir in 2 to 3 tablespoons of milk to thin it slightly. Drizzle lettuce wedges generously with the blue cheese dressing.
2 to 3 tablespoons milk, as needed to thin dressing
  • Top with bacon, tomatoes, red onion, and reserved blue cheese crumbles. Finish with a few grinds of black pepper, if desired.
1 cup halved cherry tomatoes, 2 tablespoons finely diced red onion
  • Serve the salad immediately, with extra dressing on the side.

Notes

  • Switch up the onions: If desired, omit onions or try alternatives. Sliced green onions or chives are great for a milder flavor, as are quick pickled red onions for a tangy twist.
  • Dressing notes: Short on time? Substitute your favorite creamy bottled dressing for the homemade blue cheese. Remember, this homemade dressing can be prepared up to a day in advance. If blue cheese isn’t your preference, any other creamy dressing will also complement the wedge beautifully.
  • Storage: For optimal freshness and to maintain the crispness of the lettuce, it’s best to refrigerate all salad components separately in airtight containers. Assemble the salad just before serving to prevent sogginess.
