Filling:



  • 1 container (16-ounce) reduced-fat cottage cheese (I use large curd)



  • ⅓ cup nonfat plain Greek yogurt (full fat or 2% is fine, too)



  • 2 tablespoons maple syrup



  • 1 teaspoon pure vanilla extract



  • 2 large eggs

Swirl:



  • 2 tablespoons maple syrup



  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350°F (175°C). Line an 8- or 9-inch square baking dish with parchment paper, leaving an overhang on two sides to easily lift the cheesecake out later.
  • In a medium mixing bowl, combine all crust ingredients: the rolled oats, chia seeds, 2 teaspoons coconut sugar, 1 teaspoon cinnamon, melted butter, and milk. Mix until well combined and the oats are moistened. Press this mixture firmly and evenly into the bottom of the prepared baking dish to form the crust.

  • While the crust is baking, prepare the filling. In a blender or food processor, combine the cottage cheese, Greek yogurt, 2 tablespoons maple syrup, vanilla extract, and large eggs. Blend until the mixture is completely smooth and creamy, with no visible curds from the cottage cheese. Pour this smooth filling evenly over the partially baked crust.

If you have quick-cooking oats on hand, they will also work in a pinch, though the texture might be slightly less robust. Please note that steel-cut oats (also known as Irish oats) or instant oatmeal are not suitable for this recipe, as their cooking properties and textures are quite different and will not yield the desired result.
  • Make it sweeter: This recipe is designed for a subtle sweetness, perfect for breakfast. However, if you prefer a sweeter cheesecake, especially when serving it as a dessert, feel free to customize the sweetness. You can increase the amount of sugar in the crust by an extra teaspoon or two.
