This recipe is a healthy alternative to traditional Alfredo, which is
typically loaded with cream, butter, and Parmesan cheese. This version uses
cauliflower, blended until smooth. This results in a near-perfect Alfredo
sauce with significantly fewer calories (only 111 per generous ½ cup serving!).
The flavor profile is still exceptional. Garlic sautéed in butter and olive
oil forms the base, which is complemented by the creamy puree of cauliflower
blended with milk, Parmesan cheese, pepper, and a touch of nutmeg.
Another great thing about this sauce is that it reheats beautifully. Unlike
classic Alfredo, which can separate and become greasy when reheated, this
cauliflower version maintains its consistency. It can be refrigerated or even
frozen without any issues.

Grated Parmesan cheese: For the smoothest sauce, grate the Parmesan
yourself. Pre-grated Parmesan from a can will work, but it may not melt as

Kosher salt and coarse ground pepper: Freshly ground black pepper is

Nutmeg: Freshly grated nutmeg offers the best flavor, but ground nutmeg

How to Make Cauliflower Alfredo Sauce: Step-by-Step
Cook the cauliflower. Bring a large pot of water to a boil over high
heat. Add the cauliflower florets and boil for about 15 minutes, or until very
tender. Drain well.


Cook the garlic. While the cauliflower is cooking, melt the butter and
oil in a skillet over medium-low heat. Sauté the garlic for 2-3 minutes, until
soft and fragrant. Scrape the garlic mixture into the blender.


Blend. Transfer the drained cauliflower to the blender with the garlic
mixture. Add salt, pepper, nutmeg, and milk. Blend until completely smooth. A
high-powered blender is ideal, but a food processor can also be used. Scrape
the sides as needed.
Add cheese. Stir in the grated Parmesan cheese. If the sauce seems too
thick, add a little more milk.



Finish. Toss the cauliflower Alfredo sauce with cooked pasta. Add fresh
chopped parsley and more Parmesan cheese, if desired. Serve immediately.

nutritional yeast, use plant-based butter, and an unsweetened plant milk. -

seasonings as needed.
