What stands out

  • Great for food prepping: It’s all about streamlining the process. If you make double the amount of chicken, you get double the meals with the same amount of work. Grilled chicken is great cold on top of a salad or on a sandwich.
  • Flavorful: We do as much grilling as possible. This chicken is great because you can taste the beer in every bite and the spices used in this recipe make it completely irresistible – full of flavor but not overly spicy. It’s a total crowd pleaser.

What to serve with this chicken

Try this chicken with a side of grilled stuffed mushrooms that you all love so much. We love this Grilled Vegetable Salad with Goat Cheese, too.

Round out the meal with a great salad, perhaps? An asparagus ribbon salad is a classy choice and this orzo salad is a major hit everywhere it goes.

Beer Marinated Chicken Thighs

  • Yield: 8 servings
  • Prep: 10 minutes
  • Cook: 10 minutes
  • Total: 4 hours 25 minutes

Ingredients

  • 2 ½ pounds boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 1 1/2 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 3/4 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 12 ounces beer

Method

  1. Mix all ingredients together in a zip-top bag. Move chicken around until fully coated in marinade. Place in a bowl or baking dish to protect your fridge from any possible leaks. Refrigerate for at least 4 hours or up to 24 hours.
  2. Remove from marinade and grill over medium heat for about 5 minutes on each side or until fully cooked (chicken reaches an internal temperature of 165°F when tested with instant-read thermometer).
  3. Tent with foil and rest for 5 minutes prior to serving.

Notes

This marinade would also be memorable with chicken breasts!
