How it comes together

Prep the broccoli. Cut it into florets, toss with a bit of oil, salt, and pepper and arrange it on a sheet pan.

Prepare the breading. You’ll need three shallow bowls. Into one goes seasoned flour, into the next, a beaten egg, and into the third, a mixture of panko bread crumbs, Parmesan cheese, and dried oregano.

Flatten the chicken. Simply place a chicken breast between two sheets of plastic wrap and pound lightly with a meat mallet, rolling pin, or the heel of your hand. The goal is to make the pieces of chicken an even thickness so they cook evenly. If you like, cut each piece in half, making six servings.

Bread the chicken. Working one at a time, dip each piece of chicken into the flour, coating both sides. Next, dip the piece into the beaten egg, and finally into the panko mixture. Arrange on the baking sheet along with the broccoli.

Bake. Pop the sheet pan into the oven and bake fifteen minutes. Take the pan out of the oven, stir the broccoli, and back into the oven it goes for another 10 minutes. Out of the oven again, and top each piece of chicken with a spoonful of marinara and a sprinkling of mozzarella cheese. The pan goes into the oven for just a few more minutes to melt the cheese.

Dinner’s ready!

  • Yield: 6
  • Prep: 15 minutes
  • Cook: 30 minutes
  • Total: 45 minutes

Ingredients

For Broccoli:

  • 3 ½ cups broccoli florets (about 9 ounces or 1 head)
  • 1 tablespoon extra virgin olive oil
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper

For Chicken:

  • 3 boneless skinless chicken breasts (about 2 pounds)
  • ½ cup all purpose flour
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • 1 large egg
  • ½ cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ⅔ cup marinara sauce
  • ½ cup shredded mozzarella cheese

Method

  1. Preheat oven to 425°F. Lightly spray rimmed sheet pan (18 by 13 inches) with cooking spray.
  2. Place broccoli on pan and drizzle with 1 tablespoon olive oil. Sprinkle with salt and pepper, toss until broccoli is coated with oil. Arrange broccoli in a single layer on one side of the sheet pan.
  3. Place chicken on a cutting board and top with wax paper or plastic wrap. Using a meat mallet or a rolling pin, flatten chicken to about ½ inch. Try to make it a consistent thickness so that the chicken cooks evenly. If desired, you can cut each one in half to make 6 servings.
  4. Prepare three shallow bowls for breading the chicken. In the first, place flour, salt, pepper, garlic powder. Stir to combine. In the second bowl, lightly beat the egg. In the third bowl, mix together panko bread crumbs, Parmesan cheese, and oregano.
  5. Take one chicken cutlet and coat it in flour mixture, then dip in egg mixture. Let excess drip off and then dip it in panko and Parmesan mixture, pressing lightly so it adheres. Place on baking sheet. Repeat with remaining chicken.
  6. Bake for 15 minutes, remove pan from oven and stir broccoli so it browns evenly. Bake for 10 minutes more.
  7. Remove the pan from oven and add marinara sauce and mozzarella cheese to the top of each chicken breast. Return to oven for 5 minutes or until cheese is melted and sauce is hot.

Notes

Use chicken cutlets: If you prefer, buy chicken cutlets and omit step 2. Chicken cutlets are already trimmed and flattened, ready to use.

Try a different vegetable: Other vegetables can be substituted for the broccoli. Sliced zucchini or summer squash, green beans, carrots, or eggplant are good choices.
