Tots are Always a Yes!
Cheeseburger, tater tots, casserole — say the three together and most people pay attention. This dish is comfort food at its finest: familiar burger flavors in a hearty, family-friendly casserole.
We developed this version to be creamy and flavorful without using canned soup. The homemade cheese sauce brings a smooth texture and richer taste, while ketchup, mustard, and pickle relish add the classic cheeseburger notes.
Tater tots are arranged on top and bake until golden and crispy, then a final layer of shredded cheddar is melted on top. It’s a crowd-pleaser for kids and adults alike.
What makes it special:
- No canned soup: A simple roux-based cheese sauce keeps sodium lower and flavor brighter than condensed soup.
- Crispy tot topping: Baking the tots on top creates a crunchy, golden finish that stands in for a burger bun.
- Kid-friendly and adaptable: This recipe appeals to picky eaters and can be customized with toppings and mix-ins.
- Make-ahead friendly: Assemble in advance and bake when you’re ready.
Ingredient Notes
Full measurements are available in the recipe card below. Here are a few notes to help you choose ingredients and get the best results.
- Milk: Whole milk gives the richest cheese sauce, but 2% is also fine.
- Ketchup, mustard, relish: These pantry staples recreate cheeseburger flavors. Use sweet or dill relish based on your preference.
- Ground beef: Lean ground beef (around 92–93% lean) produces minimal grease and browns nicely with onion and garlic.
- Cheddar: Sharp cheddar provides bold flavor. Shred your own for a smoother melt, since pre-shredded cheese often contains anti-caking agents.
- Frozen tater tots: One 32-ounce bag is typical; how many you use depends on dish size and how thick you want the topping.
- Optional toppings: Diced pickles, chopped tomatoes, shredded lettuce, or a burger-style sauce are great finishing touches.

Recipe Tip
Shred your own cheese. Freshly shredded cheddar melts more smoothly than pre-shredded cheese and will yield a creamier sauce.
How to Make Cheeseburger Tater Tot Casserole
1. Prepare the sauce base. Preheat your oven to 375°F and lightly grease a 9 x 13-inch baking dish. In a measuring cup or small bowl, whisk together milk, ketchup, mustard, and pickle relish; set aside.

2. Brown the beef. Heat a large skillet over medium-high heat. Add ground beef, diced onion, salt, and pepper. Cook 6–8 minutes, breaking the meat into small pieces, until no longer pink and onions are softened. Drain excess grease if needed.
3. Make the roux and sauce. Reduce heat to medium. Stir in butter and minced garlic and cook until fragrant. Sprinkle in flour and cook 1–2 minutes, stirring constantly to remove the raw flour taste. Slowly whisk in the milk mixture and bring to a gentle simmer. Cook 2–3 minutes until slightly thickened, then lower heat and stir in 1 cup shredded cheddar until melted and smooth.
4. Assemble the casserole. Spread the beef and sauce mixture evenly in the prepared baking dish. Arrange frozen tater tots in a single layer on top; avoid overcrowding so they crisp properly.

5. Bake. Bake 30 minutes. Remove from oven, sprinkle remaining 1 cup cheddar over the tots, and return to the oven for 15 minutes more, until the cheese has melted and the tots are golden and crispy.

6. Cool and serve. Let the casserole rest 5 minutes before serving. Top with diced pickles, shredded lettuce, chopped tomatoes, or your favorite burger-style sauce.
Recipe Variations
- Bacon cheeseburger: Stir cooked, crumbled bacon into the beef mixture or sprinkle it on top before serving.
- Meat swaps: Use ground turkey for a lighter option or a plant-based ground for a vegetarian alternative.
- Add heat: Sauté minced jalapeño with the onions or use pepper jack cheese for a spicier profile. Pickled jalapeños make a lively topping.
Serving Suggestions
- Salad: A simple green salad with a light vinaigrette pairs well and helps balance the richness.
- Vegetable sides: Roasted or steamed vegetables such as green beans or corn round out the meal.
- Dessert: Finish with a fruit crumble, crisp, or cookies for an easy, homey dessert.
Storage & Reheating
Refrigerator: Store leftovers covered in the refrigerator for up to 4 days. Transfer smaller portions to an airtight container for convenience.
Freezer: Freeze tightly wrapped portions for up to 3 months, or freeze the whole casserole in a freezer-safe dish. Thaw overnight in the refrigerator before reheating.
To reheat: Warm single portions in the microwave or reheat larger portions in a 350°F oven until heated through. Oven reheating helps restore crispiness to the tots.
